Pasta Grannies enjoy 'silk handkerchiefs' pasta with pesto!

- Nadia shares her recipe for 'mandilli di saea' or silk handkerchiefs with pesto - a dish typical of the Genova area in Liguria. She not only makes her own pasta, she also makes her own flour - and the result is delicious! Nadia uses the 1 egg for every 100g of flour rule, but relies more on the feel of her dough rather than the actual measurements because hand-milled flour behaves differently to shop bought flour. If some of you want to follow Nadia down this road, Fidibus is a good make which you can find online.

I've been a fan for a long time, but this one take the prize. Growing all her own vegetables? Milling her own flour? Wood-burning stove? If it weren't for the pandemic, I'be checking plane fares and heading straight to her door!
🌸 me too, she’s amazing
She’s bossing the whole job!
I'm from there and believe me,they are fabulous!! Bought pesto is no relation to what this lady has made here. The experts will never use blenders for this as the heat from the blender and the consistency will change the final result.
I ll be going with you
it's pretty common here to grow your own produce. My family does it too.
This is the type of woman I want to become. Self sufficient, using natural local ingredients, the energy of an 18 year old, in a beautiful environmentally friendly home 🌱🌻🌾🌳🌹🌿
And apparently, quite alone as well. Not so ideal.
@@nonenoneonenonenone who cares, she's happy and doing better than us city-dwellers
Who said that she is alone?
@@mondociaociao Poi meglio soli che mal accompagnati😂
I want that beautiful wood burning stove!
She is both amazing in her talent as a gardener and chef as well as beautiful. She has a classic beauty look about her. That pasta looked perfect.
I thought the same...I wish I could age like her...lovely home and cat 😻
This granny is beautiful in that tough, womanly way of self-sufficience. Glorious!
hi James, yes Nadia is travelling her own path and enjoying it 🌺😊 best wishes, Vicky
This video is in winter time. I bet her large amount of big and flashy basil doesn't come from her garden, but imported from a far country. Also the pine nuts aren't for sure from Italy, but from US or Turckey.
James
Agreed 💚
Stéphane .Muras we do produce a lot of pine nuts in Italy, not sure why you think otherwise. We do have many pine trees, especially in coastal areas such as Genova where Nadia comes from or the South, where I come from. As per the basil, not sure. Looks like a lot but there are ways to grow basil in winter too.
Have a look at my channel if you're interested in Italian food!
Ciaoooooo from the ITALIAN FOOD BOSS 💪🇮🇹
@@panuntukan In winter basil is produced in greenhouses, of which there is no dearth locally: the Genoese are very particular about buying local produce, as the flavour is completely different. Greenhouses may or may not be the most sustainable thing, agreed - but it's certainly not imported. And by the way, I suspect this lady - like most of us who are fortunate enough to grow their own - has a full stock of pesto in her freezer that she prepared in the summer. My guess is she wanted to show how to make pesto in this video, so she bought some fresh basil just for that purpose. As for pine seeds, the Italian ones are super expensive these days (winter or summer, no big difference); but again, it's one of the few things that a Genoese is most willing to pay for. You can tell Italian pine seeds from colour and size: I leave you to figure out how.
This channel deserves more popularity
More like one of the videos deserves to be nominated for a James Beard Award for Best Online Video, Fixed Location and/or Instructional.
I say it every week friends
Simply my favorite. For Turkish genuine recipes in English go to Ayşenur Altan's "Turkish Food Recipes" YT channel.
Agreed!
@@panuntukan Turkish cuisine is one of my favorites that many cultures were inspired by it/spent hours watching videos showing authentic recipes made by Turkish ninés, not modern day housewives from big cities; the amazing skills of rolling the yufka dough to paper thin without even having to lift it .... sometimes better then the Italian grannies; the food of the Sultans !
Another fabulous episode. I simply can’t get enough of this cooking magic.
And the cat is beautiful...
I loved it when she said, "here is the parsley!" not in a supermarket or a fridge😍 brava!
From Japan, congratulations everything is just amazing: she is beautiful, slim well dressed, her kitchen tools: I envy her!!!, everything from scratch!!! Speechless!
Slim healthy elegant
She is my favourite granny from all the videos
My Grandfather came to America from Genoa..this is truly amazing to watch!!
Wow...the amount of work...that is disciple and dedication...brava signora.
I am Indian but keep coming back to this channel ..just amazing food with so much love
This looks fantastic. Her skill is amazing....simple recipe with outstanding ingredients. I love the flat wooden spatula, wood burning stove, table top grinder, and mortar and pestle. She’s an amazing chef granny. Loved it!
So homey and wholesome! Sitting thousands of miles away in India, I can't help but imagine how wonderfully that garden-fresh pesto drapes the 'silky' pasta in its cheesy, nutty deliciousness. And, Nadia has such an awesome screen presence and personality just like other amazing grannies you feature on your channel. Keep up the good work!
Beautiful, beautiful Granny! And love her home. Such a wonderful life!
Nadia is a Renaissance woman! i want to spend a few days with her learning, absorbing, and marveling. Perfetto, brava Nadia!
This woman is the ultimate in self sufficiency.
This is the grandma I'm going to be ♥️♥️♥️♥️
Here i am for the 1000th time! Since this one came out i can not stop watching it! She is my absolute favourite.
Signora Nadiaaaaa!!!!
Anch'io. Sono in 💃
I wish I can live like this, I barely go out of the house and fully introverted, to grow my own food and relax like this would be heaven, the life in a capital city is just so fast I cant keep up, making pastas on my own sounds relaxing
This woman is who I aspire to be.
Everything about this is so peaceful and heavenly, her technique is flawless.
Lovely lady. A sacred way of living. Beautiful style of cooking.❤️ Thanks for sharing.
Italian cuisine is truly the best in the whole world!!!!!
She is amazing! Please, do another video featuring her. She was wonderful to watch, I would love to see her again!
That pesto is a pure labour of love! I’ve done it in a pestle and mortar, swearing all the way! But loved the end result...
Fresh ingredients for the best pasta! Love her lifestyle, top class!! 😊
Thanks again for this video! I appreciate the longer format of this last few videos with the slightly more relaxed pace and context shots.
I could probably live in that house for the rest of my life..Nadia exudes remarkable strength and elegance! Much love 💕
This is one of the best episodes, along with Giggina and Cicci because we see more cooking techniques and how the pasta is used. Nadia is magnificent.
Her hair and skin are gorgeous! It must be that fresh and healthy food
Oh wow I’m SO SO IMPRESSED! God bless this wonderful lady!!!!
That pesto looks absolutely grandioso! Hmmmmmm .... 👏👏👏
I’m starving at 01.00 am after watching this. Wow. So creamy and fresh
This is my favourite video of yours so far I think. Nadia grows her own produce, mills her own flour - just lives a super life with a really healthy diet. That pesto is to die for! Great - loved it.
I’m biased but all these Italian grannies have their shit together. Love!
Give Granny a big kiss from me! She is a real pasta maestra!
What a fantastic cook. She could even be a great chef if she wanted to.
Che bella signora e che bel posto.
It looks so creamy and silky! Brava Nonna! I wish I could sit at your table. You are an artist.
This is amazing! I love pesto pasta, fresh ingredients are seriously the best.
She has the stamina of the Energizer Bunny!! Gosh, I need to get in shape.
Hoooo Pesto! Made in heaven! My favourite, and the cat!
LOVED THIS ONE! She seems like a self sufficient PASTA GRANNY ! 😍
If I could crawl into my PC screen to get a bowl of that I would. Loved it Vicky...and her!
One of my favorite pasta grannies video. It's so rustic and from her gardenegative which I think everyone is longing for - to grow their own and live off the land. Thank you.
I used to like pesto with green peas and red potatoes and pasta of course. We went into the San Fernando Valley coming from the Hollywood Hills and went to the Italian Deli for the good cheese. All the stuff you get at the grocery stores tastes like wood.
Bravissima e bellissima!
The "Pasta Grannies" email is my favorite part of my week!
what a beautiful video! liguria is a very special region very dear to my heart and this lady is amazing.
"mandilli de sea" fazzoletti di seta in italiano, sono buonissimi e la signora li fa benissimo. Sapori di casa e tanti ricordi
Amazing!! Thanks so much for sharing
Bravissima signora Nadia. Sento il profumino da qui 💃💃💃😂👏💖
If there are three star chefs then Nadia deserves four stars
Wonderful channel, particularly this episode.
Wow! Beautiful! What an awesome lady. Tough and feminine! I admire her
Bless. This grannie really has brought home cooking to the next level, I understand that they would grow their own vegetables, but to make her own flour as well?! Amazing! I can just imagine how lovely and cosy her home is with all this extra effort she puts in her cooking.
Oh my goodness she’s so beautiful
I love her! She is so cool. I would love to be like her when I am granny age :-)
Thank you for another wonderful episode. I enjoy meeting all of these WONDERFUL grannies and look forward to the next one. I’m trying to catch up With all the ones I have missed! They make my day e wry time!❤️
Best one I've seen so far
Look at that Pecorino Sardo cheese and imagine how much flavour this will add!
That looks like the most beautiful taste/texture of pasta I could ever experience
I hope she stays safe and healthy during this crisis. Take care everyone!
complimenti indeed on everything .. she loves lighthouses and I love the art on her apron : ) I am jealous , really jealous ! Encore with Nadia please and thanks.
This is the best channel ever. Thank you so much!
What a beautiful hard working lady, that pasta and pesto look amazing. She make it look so easy!
These women are just amazing❤️
She’s glorious! I dream of running off and living my life like this.
Bella signora e ottima ricetta 😍 questo canale fantastico! Complimenti!
I have that same mortar and pestle. Never thought to put a small fabric coaster under it. Thanks Nadia!
Wow! What a great Pasta Granny! And everything is natural! The food, the wood stove and her! This lady blew me away with her skills and lifestyle! Loved the video and her!

She is so impressive and knowledgeable! My mouth is watering- looks delicious!
These recipes, and the love that goes into them, makes you want to get into the kitchen and start cooking/baking!!

Just so pleasant to watch
Wonderful, a very competent cook and an inspiration. Thank you for posting
I wish you could somehow turn this into a PBS half hour program we could all watch weekly!! I LOVE the way you produce this but it’s always too short....for me😉👍🏻⭐️⭐️⭐️⭐️⭐️ This woman, like all of the other Grannies, is just beautiful.....must have something to do with p.a.s.t.a
We love Nadia’s pasta recipe! Such detailed directions & we will try this soon!We love all the recipes from Pasta grannies!!! We pre-ordered our pasta grannies cookbooks and they made great Christmas gifts my family adores the cookbook. The stories of all the grannies are so interesting and they bring such joy to us!!!!!! Just have to ask: Who were the haters giving this awesome video a thumbs down?!
che bella signora! e che bella casa
Looks perfect and my mouth already watering))))
hello, i don't know where else to post this but i hope you and all the nonna's you've profiled are safe
thank you for your concern ❤️ our signore are all fine - the majority live in rural areas and all them are surrounded by protective families keen to keep them safe. And you are right - I am not travelling or filming at the moment and I hope this pandemic comes under control before I run out of episodes to post 😊 best wishes, Vicky
She must be a good cook, she tasted everything before serving them.
Cats and grannies, that's just too much quality content!
Delicious looking. I like the not traditional layout of her garden.
