Chukauni | Nepali Potato & Yogurt Side Dish

  • 🌿Ingredients:
    2 cups plain yoghurt, whisked
    1 large potato, boiled and cut into small pieces
    1 red chilli (or Thai green chilli)
    1 red onion, thinly sliced
    Handful of fresh coriander leaves, washed and finely chopped
    Salt to taste
    1 tsp red chilli powder
    1/2 tsp black salt
    🌿To make the tempering:
    1 tbsp mustard oil
    1 tsp fenugreek seeds
    1/2 tsp turmeric powder
    👉Method:
    Take some plain yogurt into a bowl and whisk it well until all the lumps have been completely dissolved. Then add salt, red chilli powder, black salt, sliced onions, boiled potatoes, red chillies, coriander leaves, and give it all a good mix until combined.
    To make the tempering, pour some mustard oil in a deep laddle or tadka pan. When it starts to smoke slightly, turn the stove off and add the fenugreek seeds. Allow them to fry until the fog seeds, turn golden brown, and color. Then add the turmeric powder and immediately pour the prepared tadka or the yogurt.
    Bring it all together by mixing the prepared yogurt and potato mix with the prepared tempered oil dressing and your chukauni is ready.
    Let this rest for a while before serving. This will allow the flavours to mingle together enhancing the overall taste of this recipe.
