  • In this cake decorating tutorial I decided to change things up a bit and give you a little story time while showing you how I made this Bas Releif French Country Wedding cake. This is the story about the wedding cake delivery that almost ended my entire career! If it hadn't been for the fact that I had prebooked weddings that I was committed to, you may not be seeing this, or any other tutorial, at all! I hope you enjoy this tutorial and story and get some inspiration out of both!

    The struggle is REAL. Y’all cakes get HEAVY! If you’re not a baker, or you’ve never created a tiered cake, or a layered cake. Let me tell you, that weight is crazy sometimes. Girl, I feel for you 💯💯💯 GOOD JOB on recovery 👏👏👏 I wrote bithday on a cake that I struggled with all day. I had gotten this cake to look awesome. I took a picture to show my husband. A few minutes later I’ve got my 6 month old in the car, the cake loaded, and im headed to drop off location, when my husband messaged saying “ Babe, where’s the R? You wrote BITHDAY “. I had already had a time with this cake 👀👀 there was nothing I could do, I was already on my way, about to run late, leaking milk on my shirt because the baby was crying 😅😂🤣🤣😂😅 and I forgot my icing bag 😄😁😂 I can laugh about it now, BUT I cried about it then 💯💯 I tried to give it to the lady for free, but she was an 👼 paid me and said my grandson can’t read anyways 🥰🥰🥰🥰🥰💯.

      See!! All how you deal with it! Iran there are some people who are just unhappy and stressed and eill6ger upset if you make a mistake, but for most part, people ate good if you just tell them the honest truth. I wrote bithday once too and my husband still makes fun of me;)

    Regarding the fallen cake: this is why you are who you are……..you didn’t fall apart, and you were like a general who just regroups and redesigns the battle plans. Bravo!

    I retired from my wedding cake/catering business three years ago. I cannot explain the amount of anxiety your story caused me. Worst nightmare for sure. I don't think my nerves could deliver a wedding cake now. Kudos to saving the situation!

    I'm a retired decorator in Australia.
    Did a sugar copy of a cathedral to free stand beside the wedding cake.....made stained glass windows with gelatin and painted in food colours to look like the real windows.. OK so far. We had a week of really damp weather, but the day of the wedding dawned very warm and dry.
    Got the cake and cathedral to the venue, set it all up and turned to leave....in time to see ALL the windows pop free from the strong air conditioning. Not only fall out of course, but fall inwards also. We had to swoop up the building, dash home again, carefully dig it loose from its board, glue [with glue!!] all the windows into place from the inside, reset and glue the building to its board, and dash back to the venue. We got out of the way seconds before the first guests turned up. I aged ten years. Love your cakes, don't envy you the moving them about in one piece at all!

      I have never attempted to travel cakes stacked...didn't mind doing it in two's, but not higher..... Used to do a wedding cake with two or three bells....One on the base, and two that hung from a curved frame, and actually swung. First time we made it, after I designed it, one of my team came with me to set up. She arrived with a bottle of red wine under her arm. "What's that for?" I asked. Reply was " If it all goes to plan, we'll celebrate after..... If it all fails, we'll just get drunk'" ! Well, that's one way to look at it!

    I’m glad you were able to salvage the situation. Experienced something similar and I was brought to tears. It’s funny when you talk about it later but that moment when the heat is on you, you don’t even know what to think. Bakers deserve a lot of credit tbh

    It always makes me wince when I see huge cakes shoved into the back of vans. I would definitely need to be with the cake all the way to the venue. I would also take spares, flowers etc to do on the spot repairs. It sounds like you saved the day.. Well done you.

    Oh boy the stories I could tell. The one that hit my mania button is when my neighbors dog hopped into back of my station wagon as I loaded tiers and ate one of my tiers. The manic laugh was pretty dang scary. But I had time to bake that tier and no one knew the difference. So glad you got through that one. 🥰🥰

    Gurl…I don’t do cakes but I’ve had events where as have had to make it work. It’s insane where the inspiration comes from.
    The cake you did in this video was beautiful.

    Wow! This has taught me something good. I will go look for different sizes of dommy cakes in case of a similar situation, though I don’t pray for one. I can imagine your state when you found out that the tiers fell. Thank God you came out of the situation....Kudos!!

    we learn along the way.. lol I had a similar it was my little cousin 1st birthday party . castle fell down..funny part my cousin came out with plate and knife..good thing the place had a 3 tier funny Cake as a castle. guest never knew as they had Cake to eat.

    I’m not sure I should have watched this video today. I have a 4 tiered wedding cake to deliver in less than 12 hours! It’s always a nerve wrecker for me. I try not to take these orders but sometimes people insist and I give on. Regretting the stress that these cakes bring me. No money in the world is worth it to me. I have not YET has a catastrophe happen en route to the venue but I could tomorrow!!! Thanks for sharing.

    Oh my goodness! I was feeling a bit bipolar as I watched you make this gorgeous wedding cake while at the same time listening to the nightmare of a story! I have been looking for a wallpaper pattern like the blue and white floral used on your wedding cake that was not part of your story, 😮‍💨! All I have to say is not only are you a fantastic cake designer but I now discovered you are an amazing story teller! I am so happy that after all that happened you were still able to salvage a good amount and creatively get the job done. Bravo!

    Thank you for sharing your story with us. I'm sure every baker/decorator has had a story to tell. I was new in the business and taking a cake to the wedding several miles away in another city. It was in August and the three tier cake was covered with buttercream icing. My husband (thank God for our husbands) was driving and I was trying to keep the cake upright in the back of our van. Didn't know anything about delivery boxes. Every time we hit a bump in the road, I'd yell at him "can you miss the bumps?" It takes a strong marriage to be a cake decorator and involve your spouse. Anyway, I brought fix it tools and extra icing with me. The bride wanted to use her own real flowers. Fortunately, we put sunflowers on the cake, so we hid most of the boo boos. I will never forget the slight lean on the top tier but all worked out o.k. I definitely can identify with you when you say that your career almost ended. Mine almost did too. Bless you!🍰

    Oh man! I had a similar situation in the beginning of my cake making path. I wanted to die!!! I thought I was done. No more cakes for me. I feel ya! All ended up working out. Lesson learned. 🤪

    Thanks for sharing your story & I hear you Mary! I had to deliver a slender 3-tier once via few kilometres of winding roads on a weekend meaning too many cars behind me hence slowing down isn't an option. Every turn I just froze & gave out silent screams. Didn't want that feeling again so I got a cakesafe carrier.

      I would do the cake safe, but I like to have them in dry ice also. I hear good things about them though!

    How do u deliver cakes now, are the tiers just not all put together until u get to the venue?

      I deliver in insulated boxes with dry ice now. I can't really lift much more them 3 tiers, so if they are taller I do add the top tiers at the venue.

    I love the stories you tell. They make me laugh and cry all at the same time. Of course they gave you referrals. You handled yourself in a very professional way. As much as I love the story I love the cake. It reminds me of a design my grandmother had on her dishwear and baking wear. It is quite elegant looking.       Bas releif is basically 2d textured details, like the flowers and leaves I added. I am a sucker for this pattern too;)

    Which is why I never deliver a cake stacked. Separate boxes and I stack at the venue. I've moved to the Caribbean and my struggles at the moment is finding a buttercream that could stand up to a tropical climate!

      Yes that would be difficult! I know some don't like it, but for the climate an all high ratio shortening recipe may be the best bet. The American buttercream recipe I have on this channel was originally made for this and I altered it to all butter. You can switch that out.

    Excuse me while I go get sick- my stomach is in knots for you! Great work coming up with a plan B, C and D on the fly while keeping your customer in the loop and happy! Whew! ...but then again, is there such thing as a baker who doesn't live on Plan B, C, D... Hopefully not usually that dramatic, tho!

    I am just starting out as a home cake baker. It is my worst fear of all delivering the darn cake! What tips do you have and what type of a system do you have for smooth delivery

      That was me 14 years ago so I remember the stress of trying to figure it all out;) I will attach a couple of links for you. It is easier to do that then type it all out. One of them is the video that taught me how to make the boxes and the other one is me doing a delivery.

    THIS is why I NEVER assemble the tiers prior to the venue. NEVER! I have nightmares about this kind of thing.

      I try not to, but now that I work in a bakery and space is limited, I usually have to do 3 tiers or less assembled.

    Ohmygosh, you should partner with those Cake Safe people and redo the entire trip and see if the safe would save it. Ninja turtles on your wedding day? That is just weird.

      I deliver in an insulated box with dry ice. I do have videos on gow I do that too. Probably should have added the link to that🙄
