- Though I’d eaten the famous alambres throughout the northern reaches of Mexico, it took a while for me to connect the ingredients on those kabobs with what goes into this fairly recent addition to the world of tacos. All I needed to do was think of sliding the meat, bacon, and vegetables off the alambre (skewer), cutting them all into smaller pieces, and then searing them in a pan. At the Mexican grocery store by my house, they sell an alambre mix to cook in a skillet at home-everything going in at once. But I can affirm that cooking the ingredients separately before combining them (and melting in some cheese) turns out a taco filling that soars above any other.

The few places in the SF Bay Area where I live serve Alambres with steak, onion, bell peppers, chorizo, bacon, and or ham. Sometimes even mushrooms with a pile of flour tortillas. They're definitely my go to dish

What would you use in place of onions, as I have family members that don't like nor will they eat anything with onion flavor. I would have to use bell pepper and something else to make this dish. They also do not like celantro either.
Parsley is an easy sub for Cilantro. Onions are hard to replicate without staying in the Alliums (Leek, Shallot, etc.) But I assume that counts as onion flavor? Maybe try bell pepper (lame with the Poblano IMO) or perhaps Fennel, assuming they can tolerate the Anise/licorice flavor?
Just skip the onions and cilantro. If you want the green, use baby/micro greens of choice. Use what tastes good to you!

If there is an issue with cilantro and onion, this is probably the wrong channel for you
. It's not the wrong channel. It was a question if there were substitutes for cilantro and onions as I have family members that love Mexican food, but don't like cilantro or onions. They don't like these 2 things in their food.
You did not actually say what you poured onto steak, I assuming is worcestersauce...

I would suggest not being "liberal" with salt. Causes high blood pressure, etc, like it did to me. Salt should be a "garnish" to enhance flavor that's already there.

You can also use stainless steel utensils in cast iron / carbon steel.
I noticed you were touching the raw meat and then went straight to holding and spreading/grinding the salt and the pepper without washing hands first. I’m always frantically washing my hands in the kitchen whenever I touch raw meat to ensure I don’t accidentally contaminate anything. Have I been wasting my time with all the hand washing?
No, what you do is correct for food safety. I was also surprised Rick didn't use his other hand that didn't touch the meat.
Nothing lives in salt and I'm sure he wipes down the peppermill with kitchen clean up

I'm sorry, but I believe that artificial bacon flavor ruined the entire dish. The way it's made normally you could have just substituted the 25% ground pork for pork belly.
