    Great video just wondering what the time was start to finish after you got the temp to 250?

      That's a good question and we've started asking our creators to share that info since this video was created. I'm not sure exactly but my guess would be 45-60 minutes; however it's going to vary from cook to cook based on the size, shape and starting temp of the roast so always go by internal temps to avoid overshooting.     There is a theory that the colder the meat is when you put it on the fire the more smoke it will absorb. I have not tested this, but I do put the meat on the fire quite cold.

      This has mainly to do with the smoke ring. It stops forming after the meat reaches temps in the range of 150F, so the longer you keep the meat at cooler temps the more time it has to develop the smoke ring. Give it a try!
