I bet it would be a huge help to other neurodivergent families if you shared one meal plan a week. It can be quite taxing to come up with a meal plan that's healthy and low-cost and that everyone will enjoy. I know I plan to use some of these ideas. (This is more of a summer meal in the Midwest, so I will tag it to revisit when the garden starts producing.)
I also love that you try to eat plant based but are not perfect and don't waste food. This all resonates so much.
Also, your baby is so adorable.

Hi! I am ND. I am both autistic and adhd-er. I struggle with autistic burnout too. I mostly eat the same week for week.
Overnight oats with soy milk, soy protein powder, chia seeds, oats, and sweetener. I mostly have berries on top, and that is change after what is cheap.
Lunch/dinner (mixed meal) is a large salad with soy and/or seitan “meat”.
My evening meal is a “tapas plate” with things like grapes, vegan salami or tofu, dried fruit, baby corn, and bits of vegan protein bars.
I also have snacks like bananas, dried fruit, more grapes and so on. I need it easy, quick. I sometimes change it up, but mostly I don’t. I buy cheap protein bars online, but when I get better from the burnout I will change that one out whit something cheaper. I can afford it, so I am just being gentle with myself.
I would love a video about this topic.
Thank you for sharing, love from Johanne, Norway 🇳🇴

Me and all my children are all neurodivergent. I could not handle eating the same thing more than twice in a row, but I can see how only cooking once would be amazing. I do batch cooking so my cooking time is lessened each day. Also I can't handle doing dishes multiple times a day! I do them in the morning and while I'm prepping the dinner meal. We homeschool so the dishes are coming in all day, but I just save them up and do them all at once. I would love to hear more about how others handle their challenges, so I would be up for a video on the topic. Blessings, -kate

We are a neurodivergent family. My daughter has nonverbal autism, intellectual disability, Sensory Processing disorder, ADHD, OCD, and type 1 diabetes. Meals for her are a struggle for sure. She eats only 4 or 5 main dishes for lunch and dinner, which I rotate through the week and the same sides, breakfast, and snacks every day. There is just so many foods and/or textures she won't eat.

For the past few months I have eaten everyday the same breakfast and ♥ it. It isn't boring Cottage Cheese 1/2, 1/2 Avocado, 2 tablespoons Salsa, 1/2 Banana sometimes a teaspoon of Peanut Butter and s Muffin. Keeps me full for hours, I feel much healthier than I had before eating this combination. I got the idea of doing this from your channel not the combination but the repetition. Saves me so much rime and I know exactly what to buy. Cute baby girl she is getting big

I don't throw away the inside of peppers (keep the seeds as well), but I cook them with other "waste" material like brocolli or cauliflower leaves and staples. I add onions and make a soup. Of course, I keep only the water and throw away the seeds, but sometimes I add a carrot and a potato and make cream soup.

I can relate to the neurodivergent statements, my husband is ADHD, My Bio Son (22yrs) is high sensory, and I have an adoptive 13 year old with adhd, anger trauma issues.. so I would be very interested in a video talking about such things.. The biggest challenge has been people having a empathetic understanding that kids most likely my 22 year old change is very difficult and a lot of his choices which make 100 percent to him can be very black n white to the outside “normal” world.. he had oral apraxia n high sensory as a baby and he wasn’t diagnosed with Central Auditory Processing until he was 13..
it was hard getting the schools to understand he wasn’t defiant or ADD .. He literally was wired differently and certain foods or textures ect would set him into high anxiety and he equated certain colours with what was safe vs not.

Your son is absolutely adorable! I miss those days. We aren’t vegan but I have started making two vegan meals each week. It has saved us a lot of money and we feel better too. Even when we do eat meat I make a lot of casseroles and soups with extenders so the meat goes a long way. I love all your creative recipes. We usually spend about $150 a week. That includes cat food for our five rescues, litter and laundry detergent. I’ve managed to cut this down from $200. We’re a family of 5. My son is almost 14. He’s growing quickly these days. He eats two of each meal, lol. I never have leftovers. He’s a bottomless pit, lol. My daughter has aspergers and my son has adhd. My daughter has issues with textures and doesn’t like leftovers. So I use the same items but reimagine the ingredients. That way nothing goes to waste. I usually make three different dinners each week. My fiancé takes leftovers for lunches. As I said, my son eats everything in sight.
I make break every morning. I stick to basics. I pack both kids lunches. I do two different choices each week.

I wish I could find prices like that. Being from Ontario, Canada our prices are much higher. I always shop sales and plan most of our meals on what I have on hand, freezer and sales. The cheapest we get mangos for is 1.00 each, avocadoes go for .97 on sale or sometimes the bags go for 2.88 for 5 small ones in the bag. Our grocery budget for 3 adults is 475.00 a month. I could eat vegetarian no problem but not my husband or my 27 year old daughter. Thank you for sharing with us. I always love your videos.

I would love to make that work for us for budgeting, but also to save time and decision making. but I feel like my kids are so picky these days they just wouldn’t eat. Since you have raised kids to teenagers how do you handle that? We usually just tell them that if they don’t like the meal they can have some fruit or something quick that they can get themselves.

It's easy peasy to learn, make lists with your fave main ingredients.
      Beans: burritos, chili, soup
Lentils: bbq, roti, sloppy joe, soup, spread, tacos
Oats: baked, bread, cookies, crust, overnight, rolls, roti, scones
Do chicken, pasta, potatoes, rice, etc.
Add to new ideas to lists. Ask friends, family, co-workers what 3 meals they make with x. Seach online for recipe ideas, there are tons! Soon you will have quite the collection of meals for your rotation!

I believe it is kidney beans that shouldl not be cooked in a slow cooker. Since there is a chance one or more beans could not be fully cooked, it releases a toxin that can make you feel ill. That's the only bean that I've heard about. I usually do my dry beans in the instant pot. I don't make kidney beans all that often tho.
