Instant Pot Beef Stew

    3-4 pounds beef stew meat
    1 jar chili sauce
    1 large onion, cut into large chunks
    1-2 stalks celery, chopped
    3-4 carrots, peeled and cut into large chunks
    4-6 medium potatoes, peeled and cut into large chunks
    3-4 cloves of garlic, chopped
    4 cups beef broth
    4 Tbsp flour
    1/2 cup water
    2 Tbsp corn starch
    1-2 Tbsp olive oil
    Salt and Pepper to taste
    (This can be made in the instant pot, crockpot, or on the stovetop)
    Sauté onions and celery in olive oil 5 minutes. Add beef and flour and cook 5-7 minutes. Add beef broth. If using an instant pot, cook under sealed high pressure for 30 minutes, then do a quick release. If using the crockpot, all ingredients can be added at the same time. Cook on low 8 hours. If cooking on the stove top, cook 30 minutes on a gentle boil/high simmer. Add potatoes, carrots and chili sauce. Cook an additional 15-20 minutes under sealed high pressure. Quick release and add the cornstarch slurry (mix water and corn starch). Cook 5 more minutes to thicken up, using the sauté function. If using the crockpot, add the corn starch slurry and cook an additional 20 minutes. If cooking on the stovetop, add the cornstarch slurry and cook another 5 minutes.
