Spinach Stuffed Rib Roast | Horseradish Sauce

- Recipe comes from GordonRamsayRestaurants.com. I made a few adjustments to reduce the carb count. The creamy horseradish recipe is my own concoction. Very similar to Tiger Dill Sauce at The Outback.

I made the same ribeye roast for Christmas dinner, except I didn’t stuff it. I covered it with butter and Montreal steak seasoning. Cooked it at 500 for 20 mins then 325 for 2 hours. I had an 8 lb roast. It was perfect. The outside slices were more medium to well and inside was rare like real prime rib, which pleased everyone because my husband likes his steak well done and I like rare. It was so tender and juicy! Best prime rib ever. Also when I went to move the roast from the pan to a cutting board, the ribs stayed in the pan. I didn’t have to cut them.
That's wonderful :) We plan on making these roasts repeatedly all through 2019, because you get a lot and they seem to last (in our house).

You are making my life so difficult! I always do rib roast for Christmas eve. But we have some med well to well people in the family - hard to do and not spoil the med rare for most . So I decided to do a beef tenderloin this year and let the thin end cook out rather than tying them up. But I saw this and will miss my fatty, delicious rib roast - AND STUfFED WITH SPINACH AND MUSHROOM! - my favorites. HUMMM!!! maybe I'll butterfly the tenderloin and stuff it! But we have to have that horseradish sauce either way.

I made this for Christmas Eve dinner. It was a big hit! Love the stuffing, but you’re right -so hard tying it. Lost a little stuffing but I’ll do better next time.

I made the tree the green turned out perfect I really had to work it but everybody loved it I had some homemade sauce to dip their little balls in it went very fast probably need to make 2 next time or a bigger tree thank you for your response and I pray that you have a very very Merry Christmas God bless Sandy
That is awesome -- congrats! :) We made it again for Christmas, actually. We will be making it quite a bit in 2019 because it's a cheaper source of beef to buy all at once, and it lasts us most of the week if we eat a lot of it haha, or the whole week if we're smarter.

Prime rib is my favorite cut of beef and I order it every time we go to Outback Steakhouse as well. I've only attempted to cook it once at home and it had some pitfalls, not everyone shared my preference for medium rare and I didn't have your "tiger dill sauce". People were running to the microwave to finish cooking the roast to medium or well done which I think is a tragedy on such a great piece of meat, but in the end, everyone enjoyed it (I don't think you can go wrong with this roast). I will definitely give it another try with this stuffing, you make it seem so easy and it looks great, thanks! Merry Christmas!

Thank you very much that's exactly what I thought but then again I'm just a little cook well maybe a big cook but getting smaller. I just wanted to kind of get a little confidence because it's for Christmas Eve with my family and I want them to see that it's easy to do Keto. Hope it turns out well. Dye: I'd worry it'd come out uneven because of all the folding of the dough you have to do, but maybe it'd be perfect? perhaps try the dye on a small test batch (smaller ratio of ingredients)?

My plans were to make a (Keto) rib roast for Christmas Dinner and this may be the recipe I use, looks yummy wish I could just come over to your house and eat some now!! LOL I have an old “horsey sauce” recipe and I may need to add some Frank’s......after all if we are Keto we definitely have Frank’s around the kitchen! I’m definitely going to make this to take to my daughters house Christmas Eve and I’m calling a bone for myself. I’m not sure if I’ll use mushrooms because I don’t like them but my baby daughter does so maybe I’ll treat her.

What can you substitute for the mushrooms? I'm allergic to them. That roast looks amazing.
I'd simply omit them. As for the roast: we've made 2 more roasts since the airing of the video. One was the same recipe, with spinach and mushrooms. The latest was just the roast. We didn't even use mustard. Just salt and pepper. Was wonderful :)

Good morning. This is Sandy I have a question that I thought maybe you could help me with if you would. I want to make a keto Christmas tree made out of Fathead pizza dough your stuff string cheese in the dough making little balls my question is do you think I could make it today and keep it overnight and the refrigerator and bake it tomorrow or should I just wait and try to do it tomorrow thank you for all your wisdom.
Speaking only for myself, not giving you advice, I would make it today and put it in the refrigerator, then cook it tomorrow (after a sniff test). But keep in mind we're talking about raw eggs here. Which is why I'm only talking about what I, personally, would do and have done. I've personally used the dough after it's been in the fridge 2 days. But note that everyone's refrigerator is different, and it can be hit or miss on eggs too.
