Authentic Delta Style Fresh Fish Banga Soup Made From Scratch (Palm Fruit Soup/Ofe Akwu)

    This authentic delta style fresh fish Banga soup recipe is how it should be made. Made from scratch, every spice traditionally used for this brings its flavour and aroma. People from the East call it Ofe Akwu and our Oyinbos would say Palm fruit Soup 😁
    Nuff said!
    Ingredients
    Palm fruits (substitute for canned palm extract)
    Scotch bonnet to taste
    1 large Onion ( blended together)
    Oburunbebe stick (stem of a herb a tree) some call it banga stick in the markets.
    1 tbsp ground banga spice
    2 seasoning cubes
    Salt to taste
    1/2 cup ground crayfish
    1/4 cup beletele (don't know what this is called in English but it is a dried leaf herb)
    Dried bitter leaf to taste
    Fresh catfish cut into sizeable chunks
    Notes
    You can substitute the pepper and onion blend for ground pepper and a whole onion bulb cooked in the soup and taken out when it is done.
    You can leave out Oburunbebe stick if you can't find in your local market. Your banga soup will still taste great
    Add bitter leaf a tsp at a time to suit your taste.
    When shopping for spice please note that banga spice is different from pepper soup spice.
    You can use dried fish, ice fish chicken, beef or even pork.
