Thank you very much. I tried to disassemble the machine to re-align the rollers. But I did not know I only need to disassemble one side, and forcefully released the other side but the knob is still stuck. I did not know you could hammer the cap off, thank you for the video

No. They are connected with the body.

The two big ones (the lasagna ones) have gears that are screwed on, some pliers can remove them. But I can’t figure out the smaller ones

Difficult. You will need a new numbering regulator. I don't think any work around will work.
