Looks like fun as well as good exercise and fresh air.
Riding on dark roads, sometimes in the shade while wearing dark helmets and dark cloths would be risky here with all the want-to-be NASCAR/moonshine drivers with pedal to the metal.

Unless you ride that bike like you are riding a car (middle of the road). In the Netherlands, we are taught to always ride on the side of the road, because, no matter how fast you bike, cars will always be faster and if they come up behind you, you will not always hear them coming. So please stay safe and try and keep to the side of the road. I still love these bike videos though.
While biking in the Netherlands is very popular, a sad consequence of that is that the popular and more expensive (e-)bikes get stolen a lot, increasingly by foreign gangs that load/steel a few of them in a van and drive straight across the border to their respective countries. That makes insurance against theft a necessity. These "fat bikes have become so popular with these gangs that a number of the bigger insurers have stopped providing insurance for them.
