    INGREDIENTS
    • 3 vanilla beans, or 45 ml (1.5 oz) vanilla extract
    • 450 g (3 cups) cocoa nibs
    • 750 ml (3 cups) rum or vodka (100 proof or higher preferred)
    • 240 ml (1 cup) simple syrup ( • How to Make SIMPLE SYR... ) or keto simple syrup ( • How to Make KETO SIMPL...
    *For a sweeter liqueur, increase the keto simple syrup to 360 ml (1.5 cups)
    DIRECTIONS
    1. Scrape vanilla beans and add to jar along with the pods (or add vanilla extract).
    2. Add cocoa nibs.
    3. Add rum or vodka. Stir and seal jar.
    4. Store jar in a cool, dark location such as a cupboard for two weeks. Shake daily.
    5. After two weeks, pour and strain liquid into pitcher. Use a coffee filter when straining to reduce sediment.
    6. Finally, pour into a swing top glass bottle or any resealable container.

    I tried to make an extract and it seemed to start fermenting after two days when i lefr it out in room temp? Looked like theres mini bubbles rising up and foamy on top.. is it normal? The days are pretty hot over here lately.

      It is not unusual for cocoa nibs to ferment. In fact beer infused with cocoa contains fermented cocoa nibs. With that said, you should make sure the mixture is stored in a cool dark location and shake daily. If the area is too hot, you may want to reduce the infusion time to 1 week instead of two weeks.     Could you also add the whole vanilla pod for some extra flavor not just the insides?

      Greetings Mohit! The liqueur should stay fresh for up to two months. Refrigeration is not necessary. Shake the bottle every few days to minimize seperation. Thanks for asking!

      The coffee filters can definitely be frustrating! In order to speed up the process, carefully lift up the coffee filter while its draining so there is a small gap of air between the filter and the funnel. This did the trick for us!
