Ice Cream Making Process | Industry में आइसक्रीम कैसे तैयार की जाती है ?

    Different places in India have different ways of making ice cream. But on an industrial scale, the methods for making ice cream are the same.
    Following are the steps of Ice cream manufacturing at the commercial level -
    1) Selection of Ingredients
    2) Formulation of Ice cream mix
    3) Making of mix
    4) Pasteurization of mix (80 ºC / 25 sec)
    5) Overrun (approx. 100 %)
    6) Freezing of mix (-4 to -6 ºC)
    7) Cooling/Aging of the mix (0 to 5 ºC/3-5h)
    8) Homogenization of mix (2500 psi, 500 psi )
    9) Packaging of Ice cream
    10) Hardening of Ice cream (-23 to -29 ºC )
    11) Storage ( -18 ºC or 0 ºF)
    12) Distribution (maintain low temperature )

      Depends upon overrun
      If overrun is 100% then 2000 litre ice cream from 1000 kg mix

    9:00 on the box it says 1l/550g. how come one liter be 500 grams ??

      The remaining volume is due to the air, during the overrun process, the air is incorporated into ice cream

      so the object of consideration is volume not weight because I thought 1l = 1kg approx like ghee. i always wondered Amul vanilla ice cream is soo cheap.
