یہ ہمارے پورے بر صغیر میں ہائی جین کا ایسے ہی خوبصورتی سے خیال رکھا جاتا ہے پنجاب میں حالات پھر بھی ذرا بہتر ہیں خصوصا" کراچی میں کسی ہوٹل والے سے بول دو کہ بھائی گلاس دھو کے دینا تو وہ گھور کے دیکھتا ہے اور برا مان جاتا ہے کبھی تو ویٹر بحث کرتے ہیں اور کہتے ہیں باقی بھی تی پی رہے ہیں دور سے کوئی کچرا اٹھانے والا آتا ہے اور أپکے سامنے سے گلاس اٹھا کے پانی پینا شروع کر دے گا۔

Not sure why the cook dipped the bread into the sauce BEFORE the sauce was cooked. It was dipped into the uncooked raw liver...
That liver and sauce (masala) is half cooked, dipped in it and cooked well on the stove, you can see in the video.
