  • Today we are mowing a new hay field, making different things from our cabbage and canning some green peas! Sometimes things go good, sometimes not so good, and sometimes we just make the best of what we've got. Hope yall enjoy it!
    Pool Hall Slaw
    Maw Maw Bailey’s Pool Hall Slaw out of Tishomingo, Mississippi
    1 gallon cabbage (Grated or shredded - depending on the texture you
    desire).
    3 onions chopped
    3 carrots(Grated or shredded)
    1 Green Bell pepper chopped
    3 Cups sugar
    1 t Black pepper
    1 t salt
    3 cups yellow mustard
    ½ t red pepper
    1 cup vinegar
    Combine above ingredients.
    Boil 20 minutes
    Place in jars and water bath 10 minutes.

    My mother taught me when we picked our cabbage and broccoli to soak it in saltwater to kill any bugs or slugs that try to hide in the leaves or flower heads, i know it's another step but they either sank to the bottom of the sink or floated and I've always done it that way. Larry

      I do that, but had so many cabbage worms last year. Someone showed how to use tulle (wedding veil fabric) to cover the plants. It's really inexpensive and critters can't get through it.

      @@sandysmith8567 panty hose will work to it stretches as the head grows larger, used panty hose , they also work if you trellis your melons you just make a sling to hold your melons up just tie the ends to your trellis .

    Maggie is so sweet, feeding lovie the goat, saying feed the cabbage with the bugs to the chickens.
    Jacob is like a kid in a candy store looking at all the tractors, He may just be selling them in the future ❣️

    Megan ,My Mom was a canner. She canned all week long Got sick on Friday went to the hospital on Saturday, and died on Sunday. We chopped the cabbage ,packed it tight in jars, She added salt and she poured boiling water in the jar and set it aside.That's all she did to it.

    Megan one of my best investments has been an electric pressure canner. It works great for small amounts and also you can set it and forget it. No standing and watching it for an hour or more.

    I'm a new viewer of your channel and I'm addicted already. I live in Arizona and nothing grows in this heat but 🌵 cactus, oranges, grapefruit and lemons. Maggie reminds me of me when I was little running around barefooted in the garden helping my grandma in the garden. Jacob keep up the good work driving that tractor!!

    When it comes to keeping kraut submerged place some whole leaves on the top and then place the weights on those.
    To make good kraut you must keep it submerged under the juices made by mashing it.

    I forgot to say I homestead just under 1 acre by the ocean. It ain’t easy growing in SAND!! But I manage with alot of raised beds and my chickens poop! I love your channel. Reminds me of my youth homesteading in Kentucky. I’m here caring for my 91 yr old daddy

    You guys are living the dream. I grew up in the city, and really had nobody to teach me how to do anything. I'm on a bigger property out of the big city now and doing small scale gardening, but I really wish I was doing what you guys do full-time. I don't know if it will ever happen, but I envy your way of life.

    You could try this method that works for me; chop your cabbage and weigh it, and then add 2% of that weight in salt. Mix the two together in a bowl and then scrunch it all up for about 10 minutes with your hands and it’ll start getting really wet with lots of liquid. Add to jars and store in a cool dry place, while burping the jars daily, and after a week or two taste it and when you like the flavor process it or put it in the fridge. Simple and delicious.

    I'm an old timer and I was taught to make kraut by an old timer when I was a young'un. He called that wooden thing you pack the cabbage with a tomper. I lived in Colorado at the time and he also said to use fall cabbage. I don't know if y'all grow fall cabbage but if you pick it after a light frost, it tastes a little sweeter. If you can find a small glass bowl or condiment plate that fits into that pickle jar, it'll hold your cabbage down and you won't have to fish out the glass pucks. But we work with what we have here too. I'm learning a lot on your channel and I appreciate you sharing. Thank you

    My mama did kraft differently
    She chopped cabbage, packed very firmly in quart jars 1 tablespoon of salt and pour boiling water over top to fill jars, put on lids and rings

    Almost in my neck of the woods when you came to Winston Tractor. Green peas and pool hall slaw looked good also. Got me wanting peas and dumplings.

    I think you made the right choice on canning your peas. Whenever you freeze veggies they get real rubbery.

    We are all feeling the pinch of this inflation. Be so glad when the election is over. Something got to give. Food prices and most everything is sky high. I think that is why I enjoy watching you guys. Nothing wrong with saving some money. Plus you know what been sprayed on it and it’s always better grown at home.

    Hi Megan. Just a thought. It works for me. I stopped using the dishwasher and dryer and save about $100 per month , there’s only the 2 of us… so, when I get ready to fuss about either of those chores. I think if what I’m saving and smile…

    Ive found that when my glass weights dont fit very well on odd shaped jars, a ziploc bag filled with water is an excellent solution to keep the pieces under the liquid! The water bag form fits to whatever size/shape you need. 👍🏻

    Hi Megan. I made the Pool Hall Slaw today and it was delicious! Plan to use it as a condiment on hamburgers and hot dogs. For lunch, I made a ham and cheese sandwich and spread a good helping of slaw on it. The flavors took it to another level of goodness, Thank you for more good eats.❤

    I just love watching you guys work around your property... prime example of a good America Family! You might want to try add the kraut and the salt in a bowl... work it together and let sit for a couple of hours so the salt draws the water out of it... THEN put it in a jar. Just sayin...

    I made two different kinds of kraut last year for the very first time in my life. A gentleman shared his recipe on FB and it was a winner for me. Most of it stayed pretty white and all of it was flavored excellent and it is scrunchy if that is a word 😂. I have been told you need to go by the correct signs of the moon and NEVER work with kraut or pickles if you as a woman are on your period. We slice it thin with a knife. Pack your jars and pour this solution over it. Put lids on it but not tight so that they can expel air as the fermentation process begins. I put them in a spare bathroom that we seldom use in the tub and covered them with a towel for darkness. (Probably for 6-8 weeks) After several weeks I moved them to my canning room in my basement and tightened down the lids. The basement would have been the perfect spot to begin with but my shelves was not completed. Here is the EASY recipe to pour over the cabbage once in the jars.
    Brine ….
    1 cup pickling salt
    1 cup white vinegar
    Mix this WELL with cold gallon of water. Continue to stir your solution as you add to the jars.
    Easy peasy ❤
    Every jar that we have opened has been awesome. I even opened a jar, rinsed it off and added to corn beef with potatoes….delicious.
    I have always heard since I was a little girl that signs of the moon played a big part in crispness of certain canned items. Maybe someone on here can address that further. If not, research info in the farmer’s almanac.

    Your canner looks like mine “ well used” someone listed a brand spanking new presto canner for50$ . You can bet I jumped on that deal! I met the lady that had it at Walmart. I was so blessed to get that deal!

    Hey Andy go to a scrap metal place and find you some metal the same thickness as your cutting blade, draw copies of the blades on the steel both left and right blades, cut them out and sharpen them and then heat temper them and see how well they work and last. You might save you some money.

    I’ve never watched hay making before, but I’ve been mesmerized watching, and your views there are so beautiful!!!
    I acquired my great grandmother’s sauerkraut crock last year. I just need to find a weight it’s a 3 gallon crock! And then get the nerve to try it. Wish my grandma was around to ask how she did it. Those peas look great!

    After you bale the hay I would walk the field and pick up and remove the rocks while they are more viable.

      that was the plan however the field is so rough I think we're going to have to plow the field and start over from scratch to smooth it up

    Thank you for your suggestion on the ball canning book. I hope it’s covers the how too for beginners. I’ve never canned nothing in my life. All my mentors have passed away so going through mom’s recipes… if I want to eat that delicious relish I’m going to have to make it !! Beans , corn bread and tomato relish !!! It’s addictive

      It does give good beginner help. Ive canned for a long time and I always use it. Also has freezing and dehydrating instructions. AND RECIPES!! Good ones🤗
      They update every few years and it’s worth buying

    Now those hayfields look more like North View. I loved watching Jacob look at those new tractors. It reminded me of going with Daddy to Forsyth-Stokes Tractor Company where Riddle's is now and looking at all the new Internationals and Farmalls. Y'all are rubbing off on me. I took out a rotten stump 2 weeks ago and where it was I planted 2 tomato plants I rooted from suckers and 2 squash hills. Y'all have a great evening!

    Sheeze..Gurl I gotta plant peas and sweet potato slips tomorrow. Just got my beans planted. But my maters and peppers are comin along.
    I fell in The end of March/April and broke my leg. Looks like I probably broke something in my hand when I broke my fall.
    Heck I was weeding my maters just before dark on Monday and fell and really twisted my ankle and re-injured my ✋ .
    Im scared to go get x-rays. Another bill.
    Im tryin to stay positive. Ya'll just planting your slips made me feel better. The youngins are inspiring as well.
    They are something else.
    Im gonna try to work on Friday night. Im a server so long hours on my feet and using my Hands of course. Lol
    Say a extra prayer that I can stay upright. Dang after 46 years working in the restaurant I dont bounce like I did as a young gal. 🤣🤣
    I only get one day off a week so I came in tonight before dark. Just did some fertilizer and tied up some maters. Not doing much since Ive had to miss 3 days work.

    I canned peas for the first time ever last yrs harvest- they are so good😋. I highly recommend the presto electric for small batch canning!
