HOW TO PREPARE THE BEST CORN-CHAFF (ADALU) | CAMEROON CORNCHAFF RECIPE

    This is a "one pot" yummy concoction of beans and corn. This dish was an economical way of feeding a large family or crowd on a tiny budget. We hated it growing up because there was no meat involved.
    Corn chaff features on my menu every other week. I made the cornchaff corn from scratch using popcorn and baking soda. With the Instapot (electric pressure cooker) it's an easy task. I dump the pop corn into the #instantpot, add a tsp of baking soda and set to "grains" setting. After 60 minutes, I wash the corn thoroughly. Then add the pre-soaked beans and cook using "beans" setting for 30 minutes. Drain and wash. Put back in the pot and add rest of ingredients. Taste and adjust seasoning. Set instapot on porridge. Pretty close to the one my mom used to make. But you can buy the Mexican hominy and it works just as well.
    This meal is high in calories, carbohydrates and fiber.
    1/2 cup corn...60 calories, 11g CARBS
    1/2 cup beans...115 calories, 21 g CARBS
    1 tablespoon oil...120 calories
    If eating for FATLOSS, exercise PORTION CONTROL. Limit to one cup serving size and pair with leafy greens and a lean source of protein.
