    I just tried both the new cold brew method and the hot water method side-by-side, and I have to agree with you. Although I must say, I was very surprised at the lovely floral, sweet and subtle undertones of the cold brew in such a short time. A perfectly delicious cup! The hot water method yielded a bolder first impression, which I enjoy immensely, and while I could detect those undertones, it took quite a while to get past that initial boldness to taste those subtleties. I will use both methods! How wonderful to know that I can use water straight out of my canteen to make a delicious cup of coffee without heating up water when hiking. Thank you so much for this video.

    Thank you!! I feel vindicated from my coffee buddies who rolled their eyes at my "quick" Aeropress cold brew recipe. Now I can tell them Alan Adler agrees. ;-) I must admit I was very skeptical when I first came across this idea a year ago, because everyone was saying a long brew time was an absolute must. I gave your recipe a try (espresso grind for 2 min). but my results were a bit cloudy/murky from what I had been getting in my Aeropress cold brew.
    The recipe I've been using the past year is similar but creates a cleaner cup (in my experience). I use a slightly courser grind ... more like a "fine" Aeropress grind. The max. amount I can make at one time in the Aeropress is 25g coffee w/ 150g water (approx. 1:6 ratio). I say "maximum" quantity because any more will be very difficult to press through the paper filter.
    This ratio (1:6) makes a concentrate because I prefer to dilute my cold brew with tonic and ice. On occasion I may include a subtle accent of ground cardamom in the brew or served with a rosemary sprig, etc.. :-) Nice!
    To compensate for the "slightly" courser grind from your recipe, I extend stir time (1-2 min.) and extend the total extraction time to 10 min. (includes stir time). I love the cleaner results and 10 min. is still an acceptable wait time for me. ;-) This makes enough concentrate for two good sized glasses of cold brew+tonic w/ice.

    • @illustratedWORD
      @illustratedWORD Pƙed rokem +1

      @@adityagondalia7285 Correct. Because it's room temperature water and not hot, the coffee extraction will be very slooow to where extending the time is very "forgiving" and will have no noticeable effect on the brew. I've let it go for 15-20+ min. (forgot to set a reminder alarm ;-) and did not notice a difference.
      For example, a popular way to make cold brew at home is to use a french press and let it sit overnight in the fridge.

  • @Aiki0005

    I tried this before using multiple methods like putting the coffee and water into a shaker, shake it and fill it into the Aeropress or Alan Adlers method with water at 20°C. At this temperature you need more pressure than the paper filter can handle and it will burst. I also broke my Haroon server using this method. I'd go with 30-35°C water next time and use a sturdy glass.

    I've tried this recipe but with 28°C water and let steep over an hour. For most medium roast Colombian coffees, two minutes fall short. Ethiopian coffees tend to produce lots of fines, so this may actually help with extraction but with other coffees I'd suggest going really really fine (Turkish) and stirr longer, steep longer. Otherwise under extraction is almost guaranteed!

    I tried this method and it came out a little on the weak side, but absolutely delicious. So, on the second try, I stirred for 2 minutes and it came out stronger, and has a deeper flavor.
    My favorite method for brewing regular coffee is actually to use regular drip grind, 3oz water per tbs grounds. Then, I stir in boiling water. I put on the plunger to let it steep 3 minutes total including pressing time and it is a perfect black cup of coffee for me. This method with half the water over ice works great for your Japanese style cold brew where you just chill it immediately like the guy said here in the video.

  • @teklife
    @teklife Pƙed rokem +1

    i tried this recently, i had a fine espresso grind coffee, and i know it extracts fast, so, i wanted to try a fast cold brew, so i stirred for a while, although i didn't time it, i didn't think it was crucial, but likely for over a minute and under 2 min, under 3 for sure. the result was as i expected, still strong and fully brewed taste, but less bitterness.
    now i see here a similar method but with a precise timing, to which i think your mileage may vary, dark roasts, lighter roasts, very fine or coarse espresso grind will require some adjustments i reckon, but i was pleasantly surprised by how quick i was able to extract the coffee with room temp water.
    i did another cold brew experiment with the aeropress just leaving it in there for a longer period of time, without stirring, fine ground again, which would give a bitter nasty cold brew taste when done the traditional cold brew way, so i think i left it in there for 30-45 min and tried, came out good too, but the stir method was stronger and better overall.

  • @manuelpenaruiz3694
    @manuelpenaruiz3694 Pƙed 2 lety

    The reason why Mr Alan uses Ethiopian coffees for this recipe is because of the high amount of fines these coffee produce. But you could also compensate for this by combining grind sizes. For example you could try using 50/50 so that 50% of the coffee is grinded a couple clicks finer. Don't worry about over extraction: that's something hard to achieve with cold water and such short ratio.
    That being said, I tried using much cooler water but still hotter than ambient. I tried 60°C and stirred for a minute, inverted. At one minute I plunge down applying enough force to increase the pressure as much as possible to push the extraction a bit more. At the end just add up some hot bypass and tastes sweet!

  • @arthatis

    Why is it when you put the filter and water in, none of it drips into the cup, but when i do it, half of the water is in the cup by the time im even able to get a scoop of coffee grinds? The water just flows right through. Same happens even if I add the grinds first (they are fine as well)

    • @guitashamilele
      @guitashamilele Pƙed 2 lety +4

      You always put the coffee in first, right? I have this problem of water dripping through usually. My advice is a) make sure the coffee evenly covers the filter so there are no gaps b) if using the regular hot water method, put the plunger into the top *immediately* after you pour in water to create a seal. Leave for 3 minutes. Then don't stir, just swirl the whole machine, then press down -- that's James Hoffman's recommended method.
      Haven't tried this with the cold brew method yet, but my guess is I'll need to do a), plus start stirring immediately. You could try the inverted method, although this is pretty dangerous with hot water.

    • @beardofnursing8602

      I know this is old, but if you haven't tried the inverted method, it works a lot better. I have this problem of everything just leaking through before it brews, and the inverted method solves that. If you have a flat surface, have a good kettle that doesn't pour too fast, and are somewhat careful, it's really not dangerous. The only time I've gotten a little burned is from being an idiot and trying to pour hot water from a pot (didn't have a kettle) into the aeropress.

      Try to compare to the size in the video amd for best taste you have to test and see for yourself. If it is not according to your expectation, adjust and taste again. Try doing 3 batches, with slightly different grind, everything else has to be same. Taste and choose. You can then taste it again in several minutes and compare. Then just put all the rest in one glass and keep in fridge or drink right away but next time, you can improve on something else as temperature or filtration of water or stirring time +10 sec for example. The possibilities are endless

      I also like cold brew for this reason - lower acid. But I don't think it's the long steep time that lowers the acid, it's the lower temp. Case-in-point: this aeropress method, also vacuum infusion cold brew, takes minutes.
