  • Ghee Chili Garlic Dosa
    Servings - 6
    INGREDIENTS
    Dry red chili - 1 gram
    Hot water - 100 milliliters
    Oil - 1 tablespoon
    Mustard seeds - 1/2 teaspoon
    Cumin seeds - 1/2 teaspoon
    Onions - 40 grams
    Tomato - 240 grams
    Turmeric - 1/4 teaspoon
    Paprika - 1 teaspoon
    Water - 1.3 litre
    Carrots - 90 grams
    Bottle gourd - 100 grams
    Onions - 60 grams
    Potatoes - 120 grams
    Beetroot - 2 tablespoons
    Boiled mashed pigeon peas - 350 grams
    Salt - 1 teaspoon
    Sambar masala - 1 tablespoon
    Tamarind pulp - 50 grams
    Jaggery - 2 teaspoons
    Oil - 1 tablespoon
    Mustard seeds - 1/2 teaspoon
    Split Bengal gram - 1 teaspoon
    Fenugreek seeds - 1/4 teaspoon
    Dry red chili - 2
    Asafoetida - 1/4 teaspoon
    Curry leaves - 1 tablespoon
    Dosa mixture - 160 grams
    Yogurt - 120 grams
    Water - 250 milliliters
    Garlic cloves - 1 1/2 tablespoons
    Salt - 1/2 teaspoon
    Water - 60 milliliters
    Ghee - 2 tablespoons
    Coriander - 2 tablespoons
    PREPARATION
    1. In a bowl, add 1 gram dry red chili, 100 milliliters water and soak for 1 hour.
    2. Heat 1 tablespoon oil in a heavy skillet, add 1/2 teaspoon mustard seeds, 1/2 teaspoon cumin seeds and stir well.
    3. Add 40 grams onions and cook for 2 minutes.
    4. Add 240 grams tomato and cook for 5 minutes.
    5. Add 1/4 teaspoon turmeric, 1 teaspoon paprika and stir well.
    6. Add 1.3 litre water and bring it to a boil.
    7. Add 90 grams carrots, 100 grams bottle gourd, 60 grams onions, 120 grams potatoes, 2 tablespoons beetroot and cook for 2 minutes.
    8. Cover it with lid and cook for 10 - 12 minutes.
    9. Open the lid and stir well.
    10. Add 350 grams boiled mashed pigeon peas, 1 teaspoon salt, 1 tablespoon sambar masala and cook for 2 - 3 minutes.
    11. Cover it with lid and cook for 15 - 20 minutes.
    12. Open the lid and stir well.
    13. Add 50 grams tamarind pulp, 2 teaspoons jaggery and cook for 1 - 2 minutes. Remove it from heat.
    14. Heat 1 tablespoon oil in a pan, add 1/2 teaspoon mustard seeds, 1 teaspoon Split Bengal gram, 1/4 teaspoon fenugreek seeds, 2 dry red chili, 1/4 teaspoon asafoetida, 1 tablespoon curry leaves and stir well. Remove it from heat.
    15. Pour this over prepared sambar and cook for 2 - 3 minutes. Remove it from heat.
    16. In a bowl, add 160 grams dosa mixture, 120 grams yogurt, 250 milliliters water and whisk it well.
    17. In a blender, add soaked red chili, 1 1/2 tablespoon garlic cloves, 1/2 teaspoon salt, 2 tablespoons prepared batter, 60 milliliters water and blend it well.
    18. Pour this over prepared batter and whisk it well.
    19. Take the batter and spread it over a non stick tawa.
    20. Spread some ghee on it and sprinkle some coriander.
    21. Cook for 2 minutes on medium heat. Remove it from heat.
    22. Serve.
    Instant Set Dosa
    Servings - 3
    INGREDIENTS
    Flattened Rice - 25 grams
    Water - 80 milliliters
    Semolina - 185 grams
    Yogurt - 185 grams
    Water - 60 milliliters
    Salt - 1 teaspoon
    Oil - 2 teaspoons
    Peanuts - 2 tablespoons
    Split Bengal gram - 1 tablespoon
    Fresh coconut - 50 grams
    Ginger - 1/2 teaspoon
    Green chili - 3
    Salt - 1/2 teaspoon
    Water - 50 milliliters
    Oil - 2 tablespoons
    Mustard seeds - 1/2 teaspoon
    Cumin seeds - 1/2 teaspoon
    Curry leaves - 10 - 12
    Fruit salt - 1 teaspoon
    Water - 1 tablespoon
    PREPARATION
    1. In a bowl, add 25 grams flattened rice, 80 milliliters water and soak for 2 minutes.
    2. In a blender, add 185 grams semolina, 185 grams yogurt, soaked flattened rice, 60 milliliters water and blend it well.
    3. Transfer, this into a bowl, add 1 teaspoon salt and whisk it well. Rest for 30 minutes.
    4. Heat 2 teaspoon oil in a pan, add 2 tablespoons peanuts, 1 tablespoon Split Bengal gram and cook for 1 - 2 minutes. Remove it from heat.
    5. Transfer, this into a blender, add 50 grams fresh coconut, 1/2 teaspoon ginger, 3 green chili, 1/2 teaspoon salt, 50 milliliters water and blend it well.
    6. Heat 2 tablespoons oil in a pan, add 1/2 teaspoon mustard seeds, 1/2 teaspoon cumin seeds, 10 - 12 curry leaves and stir well. Remove it from heat.
    7. Pour this over blended mixture and whisk it well.
    8. In a bowl, add prepared semolina mixture, 1 teaspoon fruit salt, 1 tablespoon water and whisk it well.
    9. Take the batter and spread it over a non stick tawa.
    10. Cook for 2 minutes and remove it from heat.
    11. Serve.
