@@nathancabada6814yeah but every good wing place in the entire universe cooks the wing fully and *then* adds the sauce afterwards. If you're trying to get the flavour permeating the entire wing, then you should marinate it, but tbh, we're talking about *wings* here, and they're not even thick enough to really make that much discernible difference between having the flavour inside the meat vs on the outside, and putting anything wet into them will make browning take longer, as that moisture needs to be driven off before browning can even begin. Chef John AND Kenji both recommend adding the baking powder with the salt, then letting them dry out uncovered on a rack above a sheer pan in the fridge for a while if possible, and *then* baking them fully before saucing them up, for maximum crispification. I mean, cook them however YOU want, but if you're looking for crispy, it's entirely possible to achieve in an oven or air-fryer, using either Chef John or Kenji's method.

You have to do the same steps for deep frying, except the you *also* have to heat a fuck load of oil, which then requires cleaning, cooling, and storing safely afterwards, which is the worst part of frying anything. I kinda dunno why you think the method I'm describing requires as much work - it requires the near minimum amount of effort that making wings at home can take.

I learned the best secret ever to make super crunchy crispy wings. Forget the baking powder.. you need to use potato starch instead. Even the leftovers were crispy after reheating them the next day. It was amazing

If you want to make crispy wings in the air fryer here’s how: 1. Air fry at 250 for 20 minutes 2. Let them sit for 15 minutes 3. Air fry at 400 for 8 minutes 4. Let them sit for 5 minutes 5. Sauce and enjoy. You’re welcome.
I think if you want them crispy you can turn the temp to 400 for the final minute or two. The sauce makes it tricky to say for sure. Typically I leave the sauce off until the final few minutes so they are crispy.

You can get the crispy wings by not tossing in the sauce until after the full cook.

I mix baking powder with some cornstarch. It works wonders.
