Watching from New York, New York! You know, it’d be faster and your bacon would be crispier and less greasy if you cooked it in the oven. You could be doing that at the same time as you are toasting the bread and making the sauce.

Hm just like a double Welsh Rabbit with bacon and ham.
The only difference is the cheese along with a little mustard usually goes in the roux to make a rich cheese sauce , which is then grilled till golden brown on top with a saucy interior
