Big Plot Hole: Why doesn't Doris just mind control Goob here? She knows what to say, she knows more about than him, and it would also make her evil plan of eventually killing Goob easier as she could just kill him right after the pitch cause he's right there. I guess you could argue she still wouldn't know how it works, but she knew how to break it in an easily fixable way and again she knows more than Goob. Also we know Goob is aware Doris can mind control as he uses Miny Doris later to control Frankie and Tiny later.
She wants a willing subject, mind comtrol, a person would act like a drone and look suspicious to other humans, especially since their head would be covered by the hat and have the hat lens to see She needs someone to blend in as a human to sell Lewis’ invention and be the face that’ll mass Produce her Helping Hat Brethern She hates the arrangement, and no doubt took pleasure when she cast Goob aside, but it’s a means to an end as she needs him to be the human pawn that make her plan come true
I'd guess that she feels far more limited while doing it or feels like it's below her to do it for a long time, since she wasn't controlling anyone when she took over the world either. It could also be that she tried and almost got lost in the rabbit hole that is Goob's mind lol

My headcanon is that Goob's head is too oddly shaped for her to take control. It's silly, but it's a quick fix.
