Dessert Pizza: How Much Is Too Much? || Really Dough?

  • The formula of a pizza (“sauce, dough and cheese”) is sacred to old-school Brooklyn pizzaiolos like Lucali owner Mark Iacono. But renowned pizza enthusiast Scott Weiner believes that the beauty of the slice comes from its creative customizability; whether it’s a pizza made topped with tacos, gold, or re-constructed entirely from a bowl of ramen noodles. So with these franken-pizzas emerging fast onto the classic NYC scene, it’s Scott’s mission to deliver Mark a novel slice that will challenge his notions and spark the debate: what REALLY makes, or breaks, the definition of a “pizza”?
    The dessert pizza at Gnocco honors the old Italian tradition of a chocolate hazelnut, fruit, and sugar-topped pizza…pie... or is it a pizza? Not even Gnocco pizzaiolo Federico Crociani can decide. It might be a pizza back in Italy, but is it “Really, Dough?!” A puzzled Scott devours a slice before bringing the debated pie to Lucali to see how Mark handles the question.

    We do that even in Naples. It's good but it's terrible cold. Nutella just makes the dough hard stone you can hear the snap it does at 7:02.

      Ron Swanson in Italy there’s a traditional pizza called “marinara” that is only pizza dough and tomato sauce (with some olive oil and olives on top) no cheese. And at the same time there are types of pizza with no tomato sauce. And are still pizza 😜

    I’m a native New Yorker and I’ve had real dessert pizza in Boston at Sal’s. The pie had chocolate and actual melted mozzarella on real pizza dough. It was served hot and was 110% real pizza.

    Just wanna let all you guys nlknow. Dessert pizza has been common in Brazil for a good 15 years now. Still don't know why it hasn't become a world spread thing. It's fucking good, it's literally dough with dessert toppings, couldn't be better

    In Italy it’s not weird to eat pizza with Nutella, often accompanied by nuts and powdered sugar. And it truly tastes awesome. But this... looks like sweetness overload. I don’t think fruits are a good addiction to pizza... but hey, I’d try it. WITHOUT THE RICOTTA. Wtf.
