Stuffed grape leaves with lamb chops/ ورق عنب مع ريش / دوالي/

  • ✨Ingridients✨
    1 kg lamb chops
    1 jar grape leaves
    Rice filling
    Parsley and pomegranate seed to garnish
    Fresh lemon slices
    Rice filling ingredients:
    2 cups short grain rice (calrose rice)
    2 large tomatoes
    1 parsley
    1 large onion
    1/3 cup lemon juice
    1/4 cup olive oil
    2 tsp salt
    1/2 tsp black pepper
    1 tsp 7 spice
    1 tbsp dried mint
    3 mince garlic cloves
    Liquid:
    1/4 cup lemon juice
    1/4 cup olive oil
    1 tbsp pomegranate molasses
    1 tsp salt
    About half cup water or the liquid from the rice
    ✨Direction✨
    1: soak calrose rice for about half an hour
    2: while soakinng the rice start on chopping parsley, onion and tomato.
    3: mix the rice with the chopped veggies, salt, pepper, 7 spice, lemon juice, dried mint, garlicpomegranate molasses and olive oil.
    4: set the filling on the side, then biol the grape leaves for a bit in hot water, if you are using fresh grape leaves boil them for longer.
    5: start on rolling the grape leaves by adding about 1/2 tbsp of the filling in the middle of the grape leave close to both sides then roll very tight, make sure to roll right or they will open.
    6: repeat till you finish all, you can strain the liquid from the rice and save it to use instead of the water to cook the stuffed grape leaves.
    7:wash the lamb chops well in cold water and vinegar then season with salt, pepper and garlic.
    8: add little bit of oil in the instant pot then cook on sautee for about 10 minutes, 5 minute each side.
    9: add grape leaves on top the lamb chops then add the liquid mix, cover then set pressure cooker for 15 minutes.
    ✨Tip:
    1:you can use any other meat you like or even you can add some ground beef in the filling.
    2: this can be cooked on top the stove but need about 1 1/2 hour cooking.
