    I line food up on my trays so I can get as much on as possible. Sometimes if I have a very few for the final tray, I will put them on a full tray where they do overlap what's on the tray just slightly, then I go back and realign so they don't touch other slices as the food dries and shrinks.

    Just passed up the kiwis at Grocery Outlet as it looked like to many to consume before going to soft. Won’t do that again. I don’t care for a lot of dried fruits as there are to sweet....think kiwi should be the happy medium. If I love them I will probably have to hide them in the back of the freezer.

    • @ThePurposefulPantry
      @ThePurposefulPantry  Před 3 lety

      Nothing. Sometimes it happens. Next time, try turning the heat down a bit. If they were overly ripe, lots of sugars will sometimes brown during the process. It's why I always suggest doing citrus lower than 52C when drying. Give them another try!

      If you dry them below 115F. But Vit C is not the only nutrient they carry - they have so many more benefits than that - the soluble fiber alone is a huge benefit of them.

      Ultimately the temp doesn't matter unless it's protein. Recommendations are for most efficient dry vs nutrient retention, and some fruits do better lower . You keep more nutrients, less browning -- more time.
