How To Make Palm Grove's FAMOUS Johnny Cakes

    When it comes to "best Johnny cakes," look no further than Nat's Palm Grove. This beach shack, set out on idyllic Junk's Hole in Anguilla's East End, knows a thing or two about good food.
    This family owned and operated establishment has long held the title for #1 Johnny cake. They are prepared with love and care, with a recipe handed down through generations.
    Join us in this video as Nat's wife, Etne Hodge shows us how to make Palm Grove's famous Johnny cakes!
    To follow along, Etne has graciously provided the recipe. You will need...
    --------------------------------------------
    2 1/2 lbs flour
    2 tbsp baking powder
    1 1/2 tbsp salt
    1/3 cups sugar
    1/3 cups corn meal
    1/4 cup oil
    About 2 cups water
    Step 1:
    Mix dry ingredients together. Make a well in the flour, add oil, then water. Mix together. Add more or less water. You do not want a sticky dough. Knead until smooth.
    Step 2:
    Cover with a cloth and rest for about 15 minutes.
    Step 3:
    Cut in small pieces and make smooth balls. On a floured surface, flatten balls with a rolling pin.
    Step 4:
    Fry in hot deep oil until golden brown on each side, about 10 minutes.

    Now just add some saltfish or some real Dutch gouda cheese from nearby St. Maarten and we good to go. Hmm...I can just imagine how great they taste.
