Air Fried Crispy Pork Belly | Siu Yuk (燒肉) | No refrigerator, No salt crust, No Baking Soda/Powder

  • There are many ways that you can make roasted pork belly with crunchy, crispy, puffy and bubbly skin and juicy meat.
    I tried to make this method different from others and it requires ❌NO REFRIGERATOR, ❌NO SALT CRUST, and ❌NO BAKING SODA/POWDER. Today, I am sharing how to roast it by air fryer. With this method, you can make it between 2-3 hours for lunch or dinner and enjoy with your family! 😉
    🔺🔺If you try my method, please review the 6 tips listed below, don’t miss 2, 3 and 4 since this method doesn’t require a fridge. For #3, I mentioned to let it sit at least 10-15 minutes or longer after applying the vinegar. Longer times will be better.
    If you don’t have an air fryer, you can still use your oven to roast it with this method.
    📍INGREDIENTS
    *2 lbs pork belly with skin on
    ~Blanching
    *2 star anise
    *2 tbsp white vinegar/cooking wine
    *3 slices ginger
    ~Meat Seasoning
    *1 tsp 5 spices
    *1 tsp salt
    * ½ tsp black pepper
    * ½ tsp garlic powder
    ~Skin
    * ½ tsp salt
    *1 tsp white vinegar
    ~Material
    *2 sheets aluminum foil
    *kitchen tools (meat tenderizer, onion holder and other pointy/needle kitchen tools)
    *Air Fryer

    🔺TIPS: (please watch the video for more details)
    1. If pork belly is thicker, you need to air fry it longer (add another 5-15 minutes above 35 minutes). If it’s smaller piece about 1 pound about 20-25 minutes. It depends on the size and thickness of the pork belly
    2. Try to prick lot of holes with this method
    3. After applying vinegar, must let it sit and absorb into skin for at least 10-15 minutes or longer. The longer the time the better.
    4. For air dry the skin, below two options for your reference. I use option 1 for this video.
    (1) I use dehydrated mode to air-dry for 45 to 1 hour with 120°F.
    (2) If you don’t have dehydrated mode on your air fryer, use the air fry mode with 200°F for 30 minutes.
    5. Also check your air fryer, and if the pork belly can fit in. Mine can fit about 9” long.
    6. After 20 minutes of air frying, if you see the crackling and bubbles only show on one side, you have to turn the pork belly around. The heat of your air fryer is probably uneven.

    I follow your step and it worked my skin was crispy. !!! Thanks again. I wanted to eat it the same day and not wait a day to cook it. Dehydrate was the key point for same day air fry.

      Thank you for the inquiry! This recipe with air fryer does not require time in the fridge. If you prefer to use the fridge recipe, then skip the dehydrating step and uncover it.

      For the oven method, it depends on your oven. I have an old oven that I air-dry with 200°F for 45 minutes in middle rack. If you see any moisture on the skin, wipe it off with paper towel. Bake for 35-40 minutes with 400°F. After, I moved it to the 2nd highest rack and put the oven on boil mode with low heat for 10-15 minutes, the skin will be crackling and bubbly. However, we need to watch it when using the boil mode, it’s easy to burn the skin. Sometimes, some parts bubble first and some is still processing, just cover with foil for parts that have bubbles to avoid burning. I think the new oven will work out well, might not need the boil mode. Good luck and happy cooking! 😊🙏

      You’re very welcome! For oven method, it’s depending from your oven. I have an old oven, that I air-dry with 200°F for 45 minutes in middle rack. After, I moved to 2nd higher rack and boiler mode with low heat for 10-15 minutes, the skin is cracking and bubbly. However, we need to watch it when use the boiler mode, it easy to burn the skin.     Hello, if I want to collect the rendered fat, can I render the fat after the blanching step? Would that still make it crispy after having the meat boiled until the fat is rendered before airfrying?

      Thank you for your inquiry! For this recipe with the short period of blanching, you won’t get the rendered fat you need. The purpose for this blanching is to soften the skin and make it easy to prick holes or else.
      If you need to render the fat or lard, it might take hours. However, it will be overcooked, the meat won’t be juicy or moist after air frying it.

      If prick too deep into fat under skin and the flesh, the skin will be over moist and wet, it might cause the skin is not crispy. You can check on my video at 6:52 minutes after the 10 minutes of air frying, the moisture draw out from skin with this video method and the skin came out crispy.       And why sometimes that (i usually still keep overnight in refrigerator). The water from the skin came out because of the salt and vinegar. But sometimes making it too wet before i put in to the oven/air fryer. And it came out not crispy. But just hard ski

    Little confusing. Are you saying 120f in Air Fryer for around 40 minutes and then 30 minutes at 200f to get the meat crispy?

      Since this recipe isn’t refrigerator required, I show two options for air-drying the skin, please refer to the video @ 6:00 - 6:30 and Air Fry @ 6:35 - 8:00 or the information below.
      Air-Dry the skin (on video @ 6:00 - 6:30)
      We need to air-dry the skin in order to crack the skin faster. Below are two options for your reference. I use option 1 for this video. (1) I use dehydrated mode to air-dry for 45 to 1 hour with 120°F.
      (2) If you don’t have dehydrated mode on your air fryer, use the air fry mode with 200°F for 30 minutes.
      Air Fry (on video @ 6:35 - 8:00)

    That's not as easy as you made it look..🤔 My belly was half the size of yours. I followed instructions perfectly, I thought, but my crackling came out too dark, and not bubbly. I'll try again sometime.

Please make sure to poke a lot of holes but not too deep (through the fat/flesh layer, the moisture will wet the skin) and it might not get the bubbly skin. If the skin turns dark quick, it might be too wet, or the heat is high/too close to skin. Sometimes with different air fryer we need to use different temperature.
