My husband absolutely loves this pie, but he is never satisfied with the amount of merengue crust he gets. So, when I make it at home I use this recipe and I make a second pie crust and crumble it on top of the pie.

I would chose a coconut cream pie. I saw a comment about fruit cocktail cake. I saw that on a tv cooking show & the two cooks said to buy the cookbook just for that recipe. I made it & I couldn’t agree more! It’s so good & so easy to make.

I made three of these pies because I had 3 egg whites. I gave two away and the people were thrilled and couldn't stop raving about them. I told them to refrigerate for a few hours, but they were so excited, they ate them right away. This is a very easy recipe to follow and fool-proof. I used my own IP lemon curd, instead of your recipe, but the rest was the same. I will be making often!
