Pickled vegetables. Unlike western pickles, Chinese pickles tend to be only salty, maybe a little bit sugar, and not sour. There are a few vinegar based pickles, but we we call it "sour vegetables" which is a different term than what it says on the pouch.

If you look at it from a different perspective, it'll make sense.. These are combat field rations, it's not really meant to "taste good".. It's just meant to mask bad tastes in horrid combat situations, so that the rancid-tasting stored water in a solder's bottle after a long day of fighting, will taste that little better...
