在抹奶油跟擠花的時候是不是要在冷氣房內做奶油才不會融化呢
動物奶油不耐熱 所以打發或抹奶油的時候盡量開空調或者墊冰水

Hi! Yesterday I did this. I got 1 problem when take the chiffon cake from oven & turn it upside down, the chiffon slide down from mold. The cake surface is wet after cold down.
Are you using non-stick mold?

可能摻到蛋黃 ,水份或是油
我曾经遇过这种情况,就算加糖或者鲜奶油都没有用,因为这个鲜奶油需要在温度低的情况下打发。建议您在打发的时候,盆的底部垫着一盆冰水
換成濃縮咖啡液需要幾克呢謝謝
10-15克 可以根據面糊濃稠度調節 :)

请问鸡蛋用什么size的,我做的一直凹
蛋糕凹陷的原因可能是蛋白没有打发到位和烘烤温度/时间.. 可以尝试把蛋白打发再硬一些 再调高烤箱温度 (每个烤箱都会有温度差别)
