Man, I just want to listen to passionate people talk about their passions, and that is exactly what this is.
It's fascinating to hear Gail talk about how it has to come down to the best dish each day, because that's how sports work, too. You do well the whole season for the opportunity to be in the last game. But once you're there, you have to win that day. The super bowl rings don't go to the team with the best record, they go to the team who won THAT game. And that's what makes competition so triumphant and tragic and beautiful.
Why do I care this much about a show a haven't watched in ten years!? Lol
But in football there are clear cut points that each team is directly trying to earn over each other. In Top Chef, it’s subjective judgments made by a panel of judges. I’d hate if a panel of judges determined the best football team in the league based on one final game and not overall performance.
This is epic! What a great guest, what a great episode. One of my favorites right away.
I admire Gail’s philosophy on not taking the whole season’s performance into account when judging that day’s leg of the competition, so that they aren’t letting a contestant’s past performance influence whether they survive a challenge that they bomb, but where I disagree is that the philosophy should switch during the finale - the choice of who wins the whole season SHOULD be based on the whole season’s performance, not just the final challenge. Judge every other challenge based on how they did that particular week, but the finale should be a judgment of their performance throughout the season and determine who is, overall, the best, not just who did the best in this one challenge at the end. The goal is choosing the actual Top Chef, not just who was the best chef during one particular challenge. It isn’t like sports where the previous games don’t matter and it’s whoever gets the most points in the final game - this is a subjective industry with a panel of judges who decide the winner. There are no clear cut points to win or lose by.

Love this! I have never consciously watched Top Chef.
The lengths that the judges go to make the competition fair is amazing. And what has encouraged me to watch the show most is the way Gail talks about the contestants. The respect and support she shows is really beautiful to see.
I've watched all 20 seasons of Top Chef and loved every minute of it. Gail may be the most articulate human ever, although Josh is right up there. Kudos on a great episode.

So I don't care about food tv, this is the extent of it for me. However, she speaks the same level of passion as josh and nichole once she realizes they know what theyre talking about, I would loooove to see her judge their food in some form or fashion

Jalapeño grape jelly on a hotdog. This guy is probably from West Texas where we do peanut butter and jelly with jalapeños and the pickled kind and it’s incredible and it’s even better with a nice sausage. You don’t have to like it but we do.

Ironically....i told myself the other day that I didn't understand why I watched anything about food. I NEVER touch food unless it's to put in my mouth 😅 thanks for pointing out I am not alone. 😂

Now that's out of the way, as someone who really enjoys crepes with kiwi and nutella, as well as chocolate with spicy peppers, I think I might buy my first bag of takis ever just to try this takis+nutella combo. Also, I'm gonna have to try her daughter's bagel recipe. The strawberry jam with the capers sounds divine; might add some creme fraiche in there too.

Wow the 'animal fat is bad' take was a really weird one. Like it's fine if you're vegetarian/vegan but if you eat meat why would you not want fat.
Yeah, it's almost certainly a vegetarian take. I say that as a vegetarian for almost 20 years. Like, I think it's gross, but if I ate meat, I would cook everything in tallow or schmaltz, lol.
To be fair, my mother prefers lean meat because she hates the texture of fat. But that’s almost specifically with steak. I mean she eats bacon and pork chops just fine lol
I absolutely LOVE this episode and Gail Simmons is super eloquent and a was an amazing guest. I also love how she, politely, dressed down Josh and Nicole for using the title "Chef", by saying that she doesn't even consider herself a Chef. Mythical Kitchen is probably my favorite channel on CZcams and I consume ALL of your content. Your knowledge of food, and honestly the history of food is incredible and almost seems encyclopedic. But you are professional content creators that work with food. And you're really good at that! Maybe even professional cooks, though I think that probably applies more to people who are cooking food for the express purpose of feeding people. It makes me cringe every single time you unironically refer to yourselves as Professional Chefs.

I agree that it seems inaccurate (+ potentially disrespectful?) for the MK crew to call themselves Professional Chefs. I've been thinking about what an easy/slick title for online content would be. Do you think the specific branding of "Mythical Chef" or even "Internet Chef" softens/qualifies the title enough? Or do you think in an ideal world they'd call themselves food experts/culinary experts/professional foodie/idk something else along those lines?
Not saying this in a "wElL wHaT sHoUlD tHeY cAlL tHeMsElVeS tHeN?!" way, genuinely interested! 😅

34:15 I believe that the cumin thing is also about people not using it correctly. They are not toasting whole seeds, and then grinding them. The deeper, richer, warmer notes are brought out in the heating, so it takes less to make a big impact. People using plain, pre-ground cumin cannot get to the correct flavor, so they add more. Just a thought.🫶🏻🫶🏻🫶🏻💋🇺🇸🌸Chili without cumin (Hormel canned is a great example) is gross, and I want to taste it. I live in texas, and cumin is key to genuine texas red, therefore, without cumin, I feel it isn’t chili. I do like Skyline, and they add cinnamon. 38:27 Bonne Maman Muscat Grape Jelly is DELICIOUS. it is a bit of a revelation, because one can truly taste the grapes, and while sweet (all preserves are, after all), it is nothing like Welch’s Concord Grape, which is sickly sweet, and tastes like not real grapes.
