Lupin because he's less revealing and makes it hard to track himself down. The Professor had to save his group so many times and almost cost him multiple times. Lupin knows that he might get caught trying to help his partners and is why when he does work in a group he choses people that he's either known for a while or think like him. This is why Lupin is better than the Professor.
Spoiler alert but in the end el professor got every one free crimes they have done will be dropped and outsmarted the inspector and the Lieutenant
But I guess lupin does get the upper hand and ends up getting away because he’s more clever always mysterious and never suspicious

Lupin seems more prepared. There’s a few times in Money Heist the professor says something along the lines of “the plan will work as long as ___ doesn’t happen”. Lupin thinks of everything. The professors plans often fail and he has to improvise. Assane will convince you the plan failed to make it easier for him to succeed.

Lupin always the best. Smooth and calm. Can deal face to face with police professionally. Professor is the type of mastermind that easily nervous and get emotional. One thing in common: they don't kill people

Both are equally great in writing and directing but the perfect dubbing of money heist in different languages makes it so popular for example Hindi voice of Professor, Denver, Berlin etc...
