The wobble test is for when to take it OUT OF THE OVEN. Once it cools it doesn't wobble any more. =)

My thoughts when hearing about a wobble test (besides checking to see if its set) was the only cheesecake that gets wobble checked after being cooked is the Japanese cheesecake, which is an entirely different beast.
Good to know; I didn't know there was a variety that used it after cooling. I've mostly made east coast US styles.
The Philadelphia style isn't baked, right? It's just blended and chilled. The rest looked like they were. Maybe I am thinking of Jell-O style :)

The wobbly cheesecake is a Japanese thing. And the crust on any cheesecake is NOT crispy.

The difference in NY and Philly cheesecakes should be really clear if there are no toppings to get in the way. The bake, consistency, and to some extent the acidity, are notably different. Your chef may have had trouble or simply used the wrong recipes.

Never heard of a difference. Everyone just makes something similar. And they're all different

Despite her appearance, Blaithin doesn't really know food at all and would be the world's worst food critic, but I will say, the fact that these cakes were made in Ireland (not sure by who and if they used authentic ingredients and techniques) does gives her a little latitude because it might not taste anything like an authentic one.

Why do you hate cheesecake so much orange hair lady? The consistency can vary from temperature or the time it was whipped or how long it was refrigerated or any number of other things. It's more of a condition of a cheesecake than a quality of one, unless you just got some straight room temperature brick mutant box cheesecake.

Very belated comment: there are TWO KINDS OF CHEESECAKE: baked, and unbaked. New York style is baked. The Pennsylvania Dutch (and apparently the Irish) style is unbaked. Similar ingredients, different dessert. Baked is dense, rich, hearty. Unbaked is light, delicate, flavorful. There's no right answer here, just like there's no right answer to "crisp biscuits or chewy biscuits?"
