Christmas French Toast 🌲

  • Ingredients:
    - 1 x Panettone, sliced into 2cm (about 0.8 inch) half moons
    - 2 eggs
    - 250ml (about 1 cup) milk
    - 3 tbsp brown sugar
    - 1/4 tsp grated nutmeg
    - 1 tsp cinnamon
    - 800g (about 1.76 lbs) fresh berries (e.g., blueberries and raspberries)
    - 3 tbsp caster sugar
    - 300ml (about 1.25 cups) whipping cream
    - 1 vanilla pod
    - 1 tbsp icing sugar
    - 3 tbsp unsalted butter
    Method:
    1. In a bowl, whisk together the eggs, milk, brown sugar, nutmeg, and cinnamon until well combined.
    2. In a separate bowl, mix the fresh berries with the caster sugar and set aside at room temperature for about 25 minutes to macerate.
    3. In another bowl, combine the whipping cream, vanilla pod (split and seeds scraped), and icing sugar. Whisk until the mixture forms soft peaks.
    4. Heat a large frying pan over medium-high heat. Melt about 1 tablespoon of butter in the pan. Dip each panettone slice into the egg mixture, ensuring both sides are well coated (but don't leave them in too long). Fry for 3-4 minutes on each side, or until golden brown.
    5. Before serving, give the berry mixture a final stir, lightly mashing about a third of the berries to release their juices.
    6. To plate, place a piece of the cooked panettone on a plate. Top with a generous spoonful of the berry mixture, ensuring some of the berry liquid is included, and add a dollop of the whipped cream.
    7. Serve immediately and enjoy!

      I had something similar in Milan many moons ago, but the addition of the berries would have been worlds better. Yummo! (PS: vowels are always pronounced hard in Italian (like you are being poked with a pin). Pannettone ends with an e, and you say it at the end 😊)

      At a potluck, I had the panettone you described(w/out rum tho), and it wasn’t great. The panettone itself was wet and was like lumpy pudding.😔😕

    I love panettone, I cut mine into slices use two slices butter one side of the two slices then flip over spread with Nutella on both slices then add berries to one half then sandwich Nutella sides together then toast in pan until golden on both sides. Or break the panettone up into a springform dish, sprinkle with chocolate I prefer to mix both dark and milk then spoon dollops of raspberry or strawberry jam over the broken pieces of panettone then pour over egg custard then bake for 45 mins, let rest for 20-30 mins to firm up then serve with cream or ice cream. Yum!

    I've done this for my kids for yrs. My youngest died in 2002 ,and he,along with his brother and sister,loved it. This bread reminds me of Eddy!!!

      2002 is when my baby boy was born. In less than a month, my mom died from cancer. Bittersweet. We didn't want her to suffer. So glad that you have those good memories!!

      It's a a common christmast gift in Italy so you can end up with a lot of them. In this way they make a good breakfast even when became a little stale.

      Little note: Italians do not eat it like this. People just take a slice and eat it, maybe with some warm milk or milk and coffee.
      Also consider trying pandoro! That one you can eat like a panettone or slice it and put any sweet cream you like in-between (Nutella, pistachio cream, caramel etc)

    I usually cut it the night before and allow it to air dry so the texture isn't as soggy. Otherwise, if you prefer a creamier texture, you can make bread pudding. Adding orange peel and bourbon is also a nice touch

It’s an Australian slang term previously it was a derogatory term toward Italians Greeks Spanish Maltese etc immigrants who were not white. BUT!     Panettone is really rich in butter and eggs as it is, so i won't reccomend to add extra calories to it

    I just had this conversation about panettone a few minutes ago. I like panettone fresh and warm with a pat of butter. It also makes great bread pudding but it makes the best Christmas french toast.

    I make the most amazing bread pudding using this bread. One cubed pannetone, half and half, eggs, sugar and vanilla. It's so fluffy, very moist and flavorful, you can eat it anytime. My Dad loved it.

    In some places of Brazil, due to its Italian immigration, panettone is popular as well. At there, one simple way was to combine slices of that cake with ice cream, our favorite was “avelã”, which is hazelnut. A possible topping is “paçoca”, a crumbly peanut candy. This is a great treat when watching a movie at home, almost effortless.

    I find if you stir your spices and sugars together thoroughly before adding any liquid really helps rid of those cinnamon lumps

    I can't stand too long in one spot (bad back). On a cookie sheet some parchment paper and a brush of melted butter. Works for me. Looks so delicious with the berries😊😊😊

    Omg, I loveeeee Christmas French toast! I love eating them itself, but making it French toast is like 100x more magical.

    I made panettone bread pudding cut into squares and drizzled with white chocolate for a party we recently went to for Christmas. Not as beautiful as someone else’s homemade linzer cookies (with homemade plum jam!), but I always keep a panettone in the freezer because you never know. Next time I am going to turn one into a layer cake.
