- Try these Toasted Teacakes for an autumn treat with a nice hot cup of tea or coffee.
I have recently rediscovered this lovely bake which we always used to have if we went to a cafe. The fresher they are, the better and they have to be toasted under the grill and have lashings of butter to complete the treat. Perfect on a windy day, real comfort food…

Ingredients
100g mixed dried fruit
150ml strong tea
30g soft brown sugar
115ml milk
35g melted butter
400g strong white bread flour
A little salt
1 tsp mixed spice
7g sachet fast action dried yeast
1 tbsp sugar
Egg wash (1 egg and a little milk)
Method
1) In a small bowl, pop the 100g mixed dried fruit, 150ml strong tea and 30g light brown sugar. Stir, cover and leave overnight
2) Heat the milk & butter then add the drained tea from the soaked fruit
3) Pop 400g strong plain flour, 1 tsp salt, 1 tsp mixed spice, yeast and 1 tbsp sugar into a bowl and mix.
4) Add the liquid and mix
5) Knead for 5 mins with an electric mixer
6) Leave to rise until doubled in size
7) Turn onto a board, add the dried fruit and knead until evenly incorporated
8) Divide into 6 and make into balls, flatten each one slightly
9) Cover and leave to rise again until doubled in size
10) Preheat the oven to Gas 6/ 200’C or 400’F
11) Brush the top of each with egg wash and bake for 18- 20 mins until golden brown
12) Leave to cool then split, toast and slather with butter

These toasted tea cakes look amazing! I was not expecting you to soak dried fruits and nuts in hot tea overnight--I'm sure that made them moist and super flavorful, as well as distributed their flavor throughout the baked good. These turned out perfectly golden brown--thanks for sharing!

Yes, my mum used to just put the dried fruit in but I found that the currants stayed quite hard. Soaking them makes them lovely and juicy, and the tea flavour works well too.

Oh Margaret these Teacakes Looks super delicious you are so right they need to be grilled and then have Lashings of butter sometimes I even add Golden syrup lol have a good weekend my friend
