  • This video shows how to make super soft kushboo idli (Mallige idli, குஷ்பூ இட்லி) recipe batter in mixie without using castor seeds( kottaimuthu in Tamil) and baking soda. You can grind this batter in mixie adding ice water. You will get white colored and super soft idli if you follow the instructions and tips. Use cloth for making the best idli.

    Kushboo idli recipe :
    Ingredients (1 cup = 250ml)
    Idli rice / Salem rice - 2 cups
    White, round urad dal - 1/2 cup
    White, big sago / Sabudana / Javvarisi - 1/4 cup
    Salt & water - as needed
    How to make kushboo idli :
    1. Wash and soak idli rice, urad dal, sago for 4 hours separately.
    2. Grind urad dal to a smooth, thick paste adding ice water.
    3. Collect in a vessel. Now grind rice + sago to a smooth paste adding required ice water.
    4. Mix both the batter using your hand.
    5. Cover and ferment for 8 to 12 hours.
    6. The next day, add salt and mix well.
    7. Roll boil water in idli pot. Take idli plate and spread wet cloth.
    8. Pour idli batter and steam it for 10 to 12 minutes.
    9. Invert the idli plate over a big plate. Sprinkle water over the cloth.
    10. Remove the cloth easily without sticking.
    Serve hot with chutney, sambar. Enjoy !

    Mouth watering idlies....healthy breakfast..you could have also add gun powder recipe as side dish....excellent texture.... Please share from where to procure the idli moulds/cooker for using cloth to make idlis.

      Hi, you can use any cotton cloth/ dhoti cloth. I used a white cotton kerchief here

    For a long time I'm looking for a recipe for gooie idlis. Usually available as street food in Khao gullies in Bangalore.. They r a bit wet, super soft, hot, melt in mouth, served with white benne n spicy runny chutney.. No sambar.. Can ur recipe be a little altered to achieve d gooie texture.. TIA Chitra or anyone else who knows how..

      Yes you can try. Softness remains the same but puffy texture may vary slightly.

      Hi, Softness may be less if the batter is not fermented properly or the batter is too thick. You can add a pinch of baking soda and try it. If the batter is too thick, add little water and use cloth to make idli. It will come out soft

      Salt can be added while grinding or mixing the batter too. But I added salt after fermentation because salt delays fermentation time in winter.

    By adding ice water my batter will get to cool then fermentation process will not take place

      No, ice water helps to prevent the mixie jar from heating up. Batter ferments if you mix with your hand and leave it for 12 to 15 hours based on weather.

      Yes its chillied water. Ice water prevents the mixie jar heating quickly.
