For Blueberry pancakes instead of egg you can just add some blended oatmeals (3/4 cup aprox) to the banana and add some milk (I use coconut milk for a vegan version). This is so delicious with homemade strawberry jam♡

I've swapped out bananas in brownies for years and they work really well. It's always best to use very ripe bananas, I've found.
I just did the pancake one; it's tastes like the eggy part of french bread; which is my favorite part so I'm not complaining. I added choco chips and it was sooo sweet. And some of them turned more brown but I think it was the choco melting and became harder and cruchy; which I liked! I would call it more egg part of french bread it was good doe I liked it
Bananas a fun swap item for anything. With the pancakes, if you’re having trouble flipping them, make them silver dollar style and cook them covered on low heat.

You can also use applesauce instead of oil for most baked goods
The brownies looked too cakey, the pancakes just confused me, ice cream is eh I don't make that sort of thing, but the cupcakes looked good other than the vanilla extract in the honey glaze. Honey has its own flavor, vanilla isn't necessary.
My grandma used to do the brownie trick but instead of substituting the oil, she would leave out the eggs and use bananas! I remember them being the best brownies ever, and I have tried the recipe several times myself.

For the pancakes, banana doesn't have a binding agent in so be rlly careful when you flip them as they'll break easily

If you mash them with a fork, you'll get pieces banana with omelette. And it will not taste good.
