- You can make this recipe with any veg you can get your hands on! Easy and delicious ital inspired curry with fried plantain, quinoa and salad! If you don't like coconut milk or have it you can sub for an extra 1/2 of water with a nut butter (cashew/peanut/almond) for a richer taste. If you don't have chopped tomatoes use 3/4 large tomatoes. If you don't have quinoa use sub for rice/brown rice/couscous etc. Hope you enjoy!!

RECIPE
1 red chilli
1 red onion
3 green onions
1 thumb of fresh ginger
4 cloves of garlic
1 tsp dried thyme
2 1/2 tsp curry powder
1 x 400g coconut milk
1 x 400g chopped tomatoes
1/4 cup of water
1 vegan vegetable stock cube
Salt and black pepper to taste
1 x 400g black eyed beans
1/2 butternut squash
1 potato
1 sweet potato
2 carrots
1 courgette - Jak na to + styl
Hack for ginger: store ginger roots in glass jar inside fridge (not freezer) filled with fresh tap water, making sure ginger is fully immersed in water. Change water every few days. Do not add salt or anything else. This works best with organic ginger because it lasts longer. You will literally have supply of fresh ginger for months, it lasts a very long time.

I put my ginger into the freezer. it's easier to take the skin off and I grate it on a finer grater whilst frozen, it's quick and easy. less waste as well

I'm watching your video it's 2:40 p.m it's Sunday here in Chicago. And I'm about to go stir crazy đ” from being trapped inside the weather is beautiful here but you can't go anywhere. I watch your videos because they helped me through my cancer treatment and through my reconstructive surgery which I'm still going through. This has been a long process from 2018 and on. Roasting a whole butternut squash - skin included - is a really good way of cooking it. The skin peels off easily afterwards. 45-60 minutes in the oven. Let it cool then peel and use.
Better yet leave the skin on. It has a lovely chewy sweet texture when toasted

Rachel I made a pot of Jackfruit Curry after watching this video and my family and I loved it!
I used sweet potatoes, regular potatoes, carrots, onions, mushrooms, butternut squash & Jackfruit! They ate It over and over again. They couldnât get enough! Thanks so much and tell mom she did a great job filming. đđđœđŻđđœđ

hint: don't leave your spring onions/scallions in the fridge, clean off the wilted bits when you bring them from the store and put them in a peanut butter jar with an inch of water in the bottom, put them on the window sill and they'll just continue to grow as long as they have water (if the outer leaves are cut they will dry out so you can peel those off before they dry out and use them). when you use them, leave around an inch of the white part (make sure when you buy them at the store that they have some roots) and plant them in some dirt inside or out and you will always have them.
I've been doing exactly this since we've all been stuck inside and it is working beautifully! I have a mini scallion garden to use whenever I need now!

now that is a tip i didn't know! In the old days, watercress was pulled up by the roots, and it kept growing in a jamjar of water (we ate a lot of jam once) on the windowsill for a fortnight at least - it grows in water, so like all such plants the stems produce new roots even when uprooted. The end of that was when people no longer wanted to do backbreaking work kneedeep in freezing cold water. Now it's mown by a lawn-mower type machine and it's dead yellow matte and wilted in the packet. Old garlic can be revived by planting the cloves, it will come alive again and grow fat and fresh. No luck with babies yet though.

Thank you. I love it when you do curries because they always turn out delish! I had every ingredient you put in, even the wilting green (spring) onion. I did use red split lentils for my protein. This along with a piece of naan was heaven!

Pro tip! simmer it long and hard and add the coconut milk/cream at the end so it doesn't burn. As you're adding the cocoanut, add that to a blender with about 1/3 or half of the curry and puree it. It allows all the cocoanut fats to emulsify with the veggies and curries flavor. Also when you add the blended portion back into the put it becomes thick and creamy and yummy

Iâve been watching a lot your videos for a few weeks now and Iâm not even vegan but I made a version of this curry and oh my goodness it was so good. I really appreciate good food with all the flavour and spice being South African. I made mine hotter and I didnât have plantain unfortunately but I had a small salad of cucumber, tomatoes and spring onions, sprinkled parsley on top and normal white rice instead of quinoa. What makes me want to make your dishes is the fact they are good and tasty and high in nutrients which is important for me because Iâm 37 weeks pregnant and love eating healthy anyway. Basically amazing and would definitely have it again.

Thanks for helping keep our spirits up. Yes to the comment about growing the green onions bottoms in solid or water. You can continue to have them for months. Also try planting a bit of the ginger after soaking overnight in water. In a few months youâll have more ginger. We have to grow covid victory gardens as much as possible.

Thanks for this recipe, I had everything in my cupboard except coconut milk, so used some whole peanut butter, and some green beans and a red pepper instead of squash.
