Yep it’s great, the buttermilk tenderizes the meat and helps break down the protein in chicken...
It's a trick they use in KFC chicken. I've made the KFC copy stuff, but never in a pressure cooker. I do a beer can chicken, with Dr. Pepper. I want to make that Alabama White Sauce and use the skin as a seasoning. I found that to be very interesting. Not very healthy, but I have to taste it. :D

I've cooked chicken for 12 hours in a slow right roaster and the meat would Still sometimes be pink. I think it just depends on what temp you cook at and for how long. If it's up to temp, it's good. Also, some seasoning discolors the meat too.
