PICKLED PAPAYA/ATCHARA

  • This is how I make my pickled papaya, coarser than the usual atchara you see in the market.
    Atchara, is a pickle made from grated unripe papaya popular in the Philippines. This side dish is often served with fried or grilled dishes such as pork barbecue, breaded pork chops, lechon, fried fish and even in sandwiches.
    Try my version of atchara with a hint of Jalapeño pepper that will make you eat more!
    INGREIENTS:
    6 1/2 CUPS OF SUGAR
    5 CUPS OF COCONUT VINEGAR
    4-5 CUPS OF GREEN PAPAYA
    (2 TBS OF SALT FOR PAPAYA)
    1 CUP OF CAULIFLOWER FLORETS OR MORE
    1 CUP OF CARROTS
    1/2 CUP OF GINGER
    1/2 CUP OF GARLIC
    1/2 CUP OF SHALLOTS OR RED ONIONS
    3-4 PIECES OF JALAPEÑO PEPPERS
    1 1/2 TBS OF GROUND PEPPERS (OR MORE)
    2 TSP OF CLOVES
