1. HALACHO
INTERVIEWEE: Chef Wilson Alonzo (IG: @chefwilsonalonzo) + Cecilio Alonzo
🇲🇽RABBIT: Squeeze local acid orange on the rabbit. Add pepper and salt, then skewer the rabbit. Place on the grill for 30 minutes. Chop and place in boiling water with special leaf, then add salt.
🇲🇽PIPIAN: In a bowl, add water, and ground pumpkin seeds, and mix. Pour it through a strainer into the pot of water with the rabbit. Add purple beans and let it cook for about an hour. In a bowl with mashed corn, add water and mix. Add to the rabbit pipian.
🇲🇽IGUANA: Place on grill for 20-30 minutes and descale. Chop it into sections (head, legs, etc.). Add to water and boil it for about 30 minutes. | Sauce: In a frying pan, add pork fat, diced onions, achiote, and then the peeled iguana. Finally, add epazote.
🇲🇽TAMALE: In a bowl, mix mashed corn, pork lard, and salt. Flatten on a banana leaf in a circle. Add the iguana sauce in the middle and wrap it in the banana leaf. Place on the grill for 40 minutes.
🇲🇽BAGDER/COATI: Skin the badger and chopt it. In a pot, add meat, orange citrus, onions, green pepper, local green chili, sweet chili, and garlic. Place on the grill and add oil, then fry for 30 minutes.
🇲🇽CHACHALACA: Gut and clean the birds. In a big bowl, squeeze orange citrus, add pepper, and salt, then skewer. Separately, in a pot, add water, onion, and leaves. Add a mixture of corn flour and water

Normally his co hosts are big into trying stuff or teaching you about their food/culture, and this time it was really neat to see sonny take on that role with someone who is local but is there to learn more about her own history and culture. I think she did a great job and even if she didn't appreciate the food for it's flavor she definitely showed appreciation for the experience. Was nice to see someone learning more about themselves through this lens. Great series 🎉

What they translated as a badger is actually a coati! Closer to a raccoon than a regular badger.

I say the same thing until I see Sonny with his next guest host. He just has great chemistry no matter who you stick besides him but also the people who they do find to guest host always bring their own flair too. Kay is probably in the top 10 or top 5 guest hosts so far.

I love this show because it not only appeases my love of exotic meats and sea food, but it also puts a major emphasis on the cultural background and necessity of hunting some of these rare species of animals

I had a friend from Brownsville Texas, and he said he grew up hunting and eating Chachalaca from the nearby woods.
By the way that animal that was shot is not a badger (weasel family), it is a coatimundi more closely related to raccoons.

My family is from Michoacán. Most of the food in these last few episodes is unfamiliar to me. Pretty cool to learn staple cuisines of my fellow Mexicans.
That's cuz they Purepecha in Michoacan. These people are Mayan. The Aztecs are Nahua

You can actually hear from the barking, what the dog is barking at! For example I have hunted with Finnish hounds and I can hear from a familiar dog, if she/he is barking at a fox or a rabbit or something else.

Another great video sonny, I wish I was there in Mexico to guide you more around Mexico and inform you about the true Origins of each dish you try. The pipián dish did not Originate with the Mayan civilization, pipián is a Nahuatl name it’s the language of the Nahua tribes of central Mexico 🇲🇽. The pipián is prepared all over Mexico now and it gained popularity when the Spanish were introduced to it in Mexico.
