Jaby I highly recommend you watch his film Kannathil Muthamitaal (A Peck on the Cheek). As a non-Indian myself it's possibly one the most poignant pieces of film I've encountered to come from India. The characters and their relationships built within the story really pluck the strings in your heart. At least it did for me. The screenplay and cinematography of the film will also forever be memorable to me.

They are extremely layered and sometimes even Indians wouldn’t be able to decipher few layers which touch mythological characters. FUN FACT: people would joke "if you're going to watch Mani Ratnam's movies go with a torch"
because there used to be more scenes where the visuals will be in the dark but iconic. The way he shoots his movies will make you fall in love with anything he shows, let it be a messed up hair of a character, a simple object, sunlight, shadow, rain or train..

Please watch the movie "Dil Se" It is way ahead of its times. Its a masterpiece. You have to step into the shoes of each character and watch this, I am sure it will surprise you. No other directors have delved into such controversial issues at that time. SRK's and Manisha's portrayal of the seven stages of love mentioned in ancient Arabic literature. Hub (attraction), Uns (infatuation), Ishq (love), Akidat (trust), Ibadat (worship), Junooniyat (obsession and madness), and Maut (death) is out of this world. You will also get to listen to one of the best background scores ever!!

Mani Ratnam introduced AR Rahman with a film called Roja. Start with that. It's a sweet and yet powerful movie about husband and wife set amongst terrorism and nationality.
Then Kannathil Muthamittal. It's a story of a foster daughter who feels the need to find her parents in the Sri Lankan Civil War and how she realises her adopted parents are her true parents.
Yuva / Aayudu Ezhudu - Same film made twice, once in Hindi and then in Telugu. I would suggest you to watch it in Tamil. A story of three youngsters from different walks of life and how they come together to change the politics of their region.
To go o his older stuff...
Dalapathi - This is where you see Rajni the actor. Another Malayalam star called Mammooty also acts in this movie. Its about brotherhood vs reality of life and is inspired from the Hindu epic Mahabharata.
Naayakan - a masterpiece of a film on the Tamil gangster Velu Naikar in Mumbai of 80's. Starring Kamal Hassan

First of all u do not need any other reason apart from Mani Ratnam to love the film.
    Kannathil Muthamittal (2002)(Tamil)
will be my recommendation, it will not feel dated.
    Ravanan (Tamil) (2010)
Based on Epic Ramayana but flips it on its head.
    Aayutha Ezhuthu (2004) (Tamil)
Youth Politics, from view point of three different stratas of society
    OK Kanmani(2015) (Tamil)
Its his best in recent times, a romance between two modern headed individuals.
    Guru (Hindi) (2007)
The story of Businessman making it big in life. Its inspired by the life of Ambani( India's Richest Man)
Nayagan(1987), Thalapathi(1991), Roja(1992), Bombay(1995), Iruvar(1997)(He himself considers this film to be his best), Dil Se (Hindi) (1998) are classics.
