  • CALAMANSI MUFFINS | How to Make Soft and Fluffy Calamansi Muffins
    Sobrang favorite ko ang recipe na 'to. This is actually my vanilla cupcake recipe and added calamansi and sobrang perfect niya. Ang sarap sa bibig ng texture niya soft and kakaiba yung pagka-airy niya, and yung refreshing flavor from the calamansi juice and zest sobrang panalo. Ang sarap na niya kainin magisa and masarap din i-partner sa kape. Hope you enjoy this recipe!

    CALAMANSI MUFFINS
    1 stick (113g) softened butter, unsalted __ 25
    1 cup sugar __ 12
    3 eggs __ 21
    1 ½ cup all purpose flour __ 15
    1 ½ tsp baking powder __ 2
    ½ tsp baking soda __ 1
    ½ tsp salt
    ¾ cup milk __ 15
    2 ½ tbsp calamansi juice (12pcs calamansi) __ 10
    Zest of 4 calamansi
    Total = 101 pesos / makes 12 pieces yummy muffins
    Bake at 180C for 20 minutes or until toothpick inserted at the center comes out clean
    Notes :)
    *You can add 1/4 to 1/2 cup more flour and 1/2 tsp more baking powder if you want them to rise well and crack. I just love mine on the wet side, moist and soft
    *Zest is important! It really brings out the fresh calamansi flavor, very great combo with coffee or tea!
    You can also use lime or lemon, just use the same amount of juice and zest according to your liking
    *This recipe makes 12pcs
    *You may want to consider greasing the top surface of the muffin tin so they won't stick on the surface once they spread over the top during baking
    *Zest your calamansi before juicing them :)

    Tried this today, i dont have a full cream milk, used Alaska evap milk instead and i dont have a muffin tray, used a loaf pan and baked it for 45mins since my pan is taller. Thank you, Mortar and Pastry. My husband loved it. 🥰🥰🥰

    I tried it awhile ago. I usually don't eat what I bake but this; this is an exception. I tried 1/3 measurement of the entire recipe. Baked it straight kasi wala akong pang muffins and voila! It is soo creamy, spongy, tangy sweet yummy! Thank you for sharing this recipe❤️

    Hi! Tried this and i super like the taste! Nagustuhan rin ng family and kapitbahay namin. Mas gusto ko to kesa yung sa bora hehe. Sakto ang asim at tamis. Dinagdagan ko lang ng calamansi kasi di ako naasiman masyado hehe. I super love your tutorials talaga kasi successful lagi nagagawa ko. More to come pls!

    Made this today! So good and fluffy 🤤 didn’t have full cream milk so I just used what we have which is carabao milk, still good!

      Hi! I used zest of 4pcs calamansi and juice of 12pcs calamansi or 2 1/2 tablespoon calamansi juice. Though you can add a bit more zest if you'd like careful not to add too much because it may be overpowering. Hope this helps! Excited for you to try it! 😊💕

    Made these today.. mejo pahinog na ang kalamansi ko at kulang ako sa zest but these still turned out so yummy! My first time to make muffins and i didnt ha e any paper liners kaya dumikit sila sa muffin pan :( di man sila pretty, masarap pa din! Thanks for the recipe!

    Tinry ko to. Sobrang sarap. Sakto lang yung 12 calamansi. Wag nyo gayahin yung 1/4 cup calamansi juice sa ibang recipe. Sobrang asim. Pero yung recipe na to sobrang sakto lang. Best recipe na nakita ko dito sa youtube. Pero ask ko lang pano ka nag zest? Haha ang hirap mag gadgad eh?

    Thanks for this recipe. May I clarify? So it's not just milk but buttermilk that will be used as ingredient. The video showed buttermilk but the list of ingredients just reflected milk. I understand buttermilk will make the muffin softer, right?

    Hi. These look & sound yum. Could you please let me know what a calamansi tastes like. It looks like a tiny lime. I've never heard of them before. I don't think we have them here in Australia but I could be wrong. Thanks heaps. 🧁🧁🍽

      Hi! Yeah, they are somehow like mini limes in terms of acidity but they really have distinct flavors. Not quite sure though if they are native only here in the Philippines. But you can definitely use key lime or lemon instead, they will surely still come out great! 😊💕
