Decided to try the Panera Chicken & Rice soup recently then looked online to see if there was a copycat recipe. Glad that there was and is pretty simple to make as well. I used half-and-half and Rice A Roni chicken flavored rice. Soup got thick fairly fast once all together and prep time aside, it took an hour, maybe less on the stove. Thought it was pretty good.

Favorite fall recipe? Chicken and dumplings. Like the straight old fashioned only chicken and dumplings with none of the healthy veggies, chicken and dumplings goodness. I used to sit in my grandmothers kitchen and roll out dumplings all morning while she had huge pots of chicken broth simmering, then while it was cooking we'd go pick the last of the blackberries for cobbler and make dessert. I'm feeling really southern right now lol

Favorite cold weather recipe you ask? My Grandma Ginny's Meat Dumplings! Seriously.. THE BEST THING EVER!
Make broth in 8-10quart stockpot with 3-4 lg bone-in chicken breast, 1 onion cut in half, 3 celery stalks cut in half, handful of baby carrots, salt & pepper to taste. Add water until pan is 3/4 full, bring to boil & then reduce heat to a slow boil or simmer until chicken is cooked through. Remove chicken, remove skin & bone & shred (keep in fridge until later). Strain broth to remove all veggies & return broth to pan.
Next make 1" meatballs using 1lb of hamburger, half a small, diced onion & salt & pepper. This will usually make between 25-30 meatballs which is plenty for a very large batch!
Dough:
4 eggs
6Tbsp melted butter
3c flour
1/2tsp baking soda
1tsp salt
*Beat egg, blend in 1/2c flour.
*Melt butter, allow to cool before adding to eggs so not to cook the eggs.
*Add soda, salt & remaining flour. Mix well & form into 2 balls.
*Roll out very thin, about 1/8 thick & cut onto approx 4" squares.
*Wrap around balls & put into slow boiling chicken broth.
*Let cook at least 1hr, until balls are cooked through.
*Add chicken back to broth to rewarm before serving.
I'm simple so chicken noodle is my favorite. This looks really good. I might have to try this

And with the beyond meat "chicken" brand strips, Uptons traditional setian, pre-baked marinated tofu cut into cubes, and veggie stock options, and Earth Balance vegan butter I can totally make this. I can make this faster by using my rice cooker. And using frozen mixed veggies and frozen chopped onions, thank you Erin for the yummy recipe.
oh, for the seasoning I'll add some onion powder, garlic powder, pepper, ground cumin, and some dried parsley.

Not sure if Adam is lactose intolerant but lactose does not cook out ..this soup looks amazing. I'm gonna have to try it. It helps me that it is lactose free. . My favorite cold weather foods would be chicken and rice soup which is why I am here for the first time.

Brittany Kostecka I thought it was way easier to use rotisserie chicken! The first time I tried it I felt like I was doing too many things at once so it's great to just have some chicken already made (and extra juicy and flavorful) like a rotisserie chicken. Don't skimp on the garlic either. Other than that I haven't tweaked anything! My mom's white chicken chili is my favorite thing ever. It's a croc pot recipe, and I could eat it everyday. I really like including cheese to the croc pot because it melts nicely, but with it is perfectly fine without it so Adam would be able to enjoy it too.

Hi!! Will try your wild rice creamed chicken soup w/coconut milk. A super quick & easy soup recipe that I often crave any time of year was one my mom used to make. It is just canned stewed tomatoes with tiny meatballs. You mix ground beef w/salt & pepper to your taste, no bread crumbs, no egg; just ground beef w/salt & pepper. Hand roll small meatballs approx. 1/2". Drop in pot of simmering stewed tomatoes. Cook about 8-10 minutes. Depending on amount of tomatoes & meatballs; add a pat of butter when done: serve!! Doesn't get much easier than that

I love having beef stew..and it's so easy to make. You could literally just throw in beef, carrots, onions, potatoes, beef stock, tomato paste, and seasonings in a slow cooker. Done.

HEY ERIN, Adam loves this so much, and he loves corn... you could double the recipe and to half of it; add some spices like cumin & oregano (or taco seasoning), a can of those diced fire roasted rotel tomatoes, a can of corn and serve it with cubed avocado and tortilla chips to turn “leftovers” into a whole new recipe: Mexican Chicken & Rice Soup! 🍗🍚🌶🌽🍅🥑🌮🍲
