Wow, what a meal. I especially love that your family asks the Lord for His blessing before you eat, reminds me of my childhood, we said "grace" before eating also.
Even now so many years later, we still ask for the Lord's blessing before we eat. It's nice to know there are other families out there that still follow that tradition.
And to gentleman that offered the prayer, it's a fine prayer.

Really took me back. I had Gar Fish Balls in Louisiana when visiting relatives in the "country." My mother was a DeVille/Gremillion from Alexandria and spoke French before she spoke English. I must have been around ten years old at the time and when I told people I had eaten Gar fish they all laughed and said there was no way and no one ate this fish. They do not know Cajuns, I guess. They can make anything taste good with a Roux. I am now 74 years old so that was a very long time ago but I remember they tasted great. Good job on your video.

I love those gar balls the way you make them. I also like them the size of golf balls, dipped in wet batter, and deep fried. Sometimes I make them with crown conch, common on Florida oyster bars.
And I grind them in an old Griswold meat grinder that my Mother got for a wedding present 73 years ago.
I watched this video at 1:AM, and am just about to start rummaging the freezer for the makings of some gar balls.
I envy the people setting down to the meal you prepared.
    Great video ! ! !

One of the biggest gars my dad caught was over 17 ft. The boat that he was in when he caught it was a 16ft aluminum flat bottom and he put it in the boat, already dead/ shot to the head , and both the nose and tail hung over each end. Oh man , what a fishing story that was. Still got the picture of it but that’s of it hanging from the scale , the local newspaper came out and took a picture and did a little write up about it. He gave it to some folks that were in need and my mama didn’t know how to cook it, other fish she would but she just didn’t want to deal with it so it worked out for everyone. Really enjoy and learn a lot from your videos, I’m a late subscriber (2019) but better late than never. Haven’t seen any resent dates, hope you keep ‘em coming.

Used to bowfish for "gator" gar back when I was in my 20's. We knew you could eat 'em, but we had other fish like snook which were the preferred fish back in those days, and probably still is. Like your recipe, looks real good. At least you use lard, that's something you don't see many people do nowadays. My family has always used it, and we never died from it! LOL!! Makes the best biscuits too!

Quick tip for chopping onions: If you wipe a bit of white vinegar on the cutting board before you chop your onions, your eyes will not burn, and it will not affect the taste of the onions.

you can sharpen the blades on your grinder. find a chunk of flat sandstone sidewalk. add a little cooking oil, then lay the round blade flat on the sand stone. rub it on that sandstone in a circular fasion. flip it over and do the other side. then wash it and put it back together. there ya go. i have a older one from the early 1900's. i keep it sharp and well oiled. works great now, will still work great another hundred years from now if upkept.

The gar has been a survival staple since antiquity. The Native Americans here in Florida would use the scales of the alligator gar as arrowheads and the hide for breastplates. Worth note, if you happen to get one that's full of roe, don't eat the eggs as they are covered in a poisonous secretion.

Well ... I USED to have a crush on Miranda (LoL). I have never had gar. Our gar (we call them alligator gar) are only about as long as your arm and they dart around in the shallows, near low-water crossings, etc. They do not get much longer than my arm and they could not have enough meat to be worth the effort. I am sure we prolly have some bigguns, over in the swamps near the Louisiana Border (Texas) but I never have explored that area. Looks really good.
