      Exactly. Totally the same here! I know some people watch the videos of their favourite CZcamsrs right away they're out and even if I understand that, I have to put Sarahs content in some sort of "ceremony" with a cup of tea. Like two nights ago, I woke up in the middle of the night(insomnia), saw a new upload and my first indention was to watch it, maybe to calm down, some positve distraction, but also knowing I wouldn't, cause I would save it for my Earl Grey "London fog" style in the morning.

    Try using cashew butter instead of sunflower butter to get a more neutral flavor for vegan vanilla ice cream! Also I tried the Tasty vanilla ice cream, and you can definitely taste the coconut, but it is good!

For a nice simple ice cream base, I really love Avant-Garde Vegan's recipe, it's his mango and passion fruit one, but it's very easy to omit the fruit and just do the vanilla base and it's one of my favorites in those I've tried so far! Apparently you can make carbonated type drinks just with a few very tiny pieces of sourdough bread, and the person in the video used a few raisins too, sugar and fruit, without needing to buy that Kefir stuff...i think that technique is called Kvass...It's the last video below...The first three just use sugar and ginger, plus you can use fruit, either raw or cooked...The ginger and sugar is called a "Ginger Bug", just with ginger and sugar, (though i think you can make these things without ginger and just use fruit...i forget why they wanted to use Ginger, and i guess you can use any type of sugar), and you let it ferment and it starts developing natural carbonation,...i don't know how long they keep their ginger bug going, but it seems like a long time...The first week, it looks like you need to add more ginger and sugar each day to keep feeding it, then after you put it in the fridge, maybe once a week, though i'm not sure...Seems like it would be good to start a new batch occasionally...You don't NEED to use Ginger, i don't think, i think you can use fruits only, as well...i wish i had known of these particular techniques a long time ago...When you put it in a bottle with an air-tight lid, you have to open the bottle every 8-12 hours, initially, for maybe 5 seconds or more, so the bottle doesn't explode, then put the lid back on...Though you might want to start with Number 4, as it is the easiest one, which takes less time, and she may not have used ginger, maybe only fruit, sugar, a few raisins, and a few very tiny pieces of sourdough bread, and it takes 24 hours, and you can use any fruit, and you may be able to use any yeast bread, though, not sure....Number 4 seems the simplest and less time consuming...i have not tried these...⭐

    So glad to here you are trying to be more sustainable! One thing to maybe think on is the dehydrating of your milk pulp; the long run time on your oven, even though it is on a low temp, can really add up for energy usage
    I have, however, come to find that pulp works great in baked goods without dehydrating and adjusting the hydration level from other ingredients

    Before I went vegan, I used to sometimes have cappuccino made at home. I had a frother like the one you have, and after I frothed the milk in it, (skim milk), I would put it in the microwave for about 10 or 15 seconds, and it would make the foam thicker and stiffer, so that it would stay on top of the coffee instead of blending into the coffee. I've never tried it with plant based milk, though, so I don't know if it would work.

    Have you tried milling grain in the VitaMix? It isn't ideal (a grain mill is on my wish-list!) but it does work adequately, although I'd say it doesn't get the flour fine enough for 100% whole grain doughs. One caution, though, is that it does scratch up the plastic container. I even just use the regular blade, although I'm sure the dry blade would work marginally better. It does heat up the grain as it processes, but I store my grain in the freezer and then do only a cup or so at a time and it doesn't get too hot. If you're looking for more whole grain sourdough inspo, check out Elly's Everyday Sourdough here on YT. Thanks for the great video!

    Next time use cashew or almond butter in your ice cream base. OR make a regular custard with plant milk and sugar and corn starch....or maybe even egg replacer. Either way, Make a regular custard. :) just without eggs.
    I love molasses!! I made molasses cookies last week but honestly the recipe.....ugh way too much ginger.

    Great video. I make a very simple ice cream using coconut milk. Blend 2 cans full fat coconut milk, 1/2-3/4 cup real maple syrup and 1 tablespoon real vanilla. Also awesome maple walnut adding maple extract too and toasted walnuts at the end. Coconut chocolate almond adding almond extract and toasted unsweetened coconut and almonds at the end. So delicious. It gets hard if you freeze it for a long time but it’s so simple and absolutely delicious.

    I've been making kefir since May, even my dad drinks and loves it even tho he's not so much about "healthy food trends" 😄 And about the sunflower ice cream, i suppose the use of sunflower is because of the lecithin which acts as an emulsifier. Soy is also rich in lecithin (hence is normally used for vegan mayo), you could try just soy milk or buy lecithin granules!

    • @SarahsVeganKitchen
      @SarahsVeganKitchen  Před 3 lety +1

      That's a good call! Come to think of it, I use sunflower lecithin granules in my homemade butter so that makes perfect sense! I may give it another try with the soy too.

      @@SarahsVeganKitchen Celery bottoms in a shallow dish of water. Keep replenishing the water every day & in a few weeks you'll see new stalks. (Then you can plant them in soil if you like.) Also, you can plant a sliced cherry tomato in a little pot of soil & it will root & grow into a plant. Potatoes, too - just let 1 or 2 get some 'eyes' then cut a few chunks w/the eyes & put them into a medium pot of soil. Cover with straw for the winter & in Spring you'll see shoots of leaves & then there will be a WHOLE batch of potatoes underneath.

    Hi Sarah! I've been around since your "hot dog" video. My young son and I love watching your videos for inspiration. He's in camp "mushrooms are yuck" but he's just said he wants to eat the mushroom pasta you made. What are the ratios? Thank you in advance!

    • @SarahsVeganKitchen
      @SarahsVeganKitchen  Před 3 lety

      Aw that's so cute! I didn't measure but I'd say we probably used roughly:
      -1/2 cup dried shiitakes soaked in boiling water with a piece of kombu to make the "fishy" broth
      -half a white onion, diced
      -a tablespoon minced garlic
      -2-3 tablespoons minced parsley
      -2 tablespoons veg butter or olive oil
      -pinch red pepper flakes
      -sliced lemon
      -half a pound of linguine, plus reserve a splash of pasta water
      Alternatively, I think you could probably follow any good non-vegan linguine and clam sauce recipe! You could substitute an equivalent volume of king oyster or shiitake mushrooms for the clams in the recipe. Hope that helps! I'll try to get a more precise recipe up on the blog soon!

      I have a few bottles of Arctic Fox color to use up, but after I go through it I'm def going to just let it fade out and grow in naturally! Luckily this lavender color and the pink I have seem to fade to a nice pastel, but I haven't had as much luck in the past with more vibrant colors so your mileage may vary!
