      Thanks! The consomme is actually not my idea, they use this technique a lot in the South of France. I am pretty good at making it because my old chef would yell at me every time because it wasn't clear enough! đŸ€Ł

    where do you purchase sashimi grade fish though

      It should be really fresh fish, with absolutely no smell. It's better if you clean the fish yourself, and watch carefully for things like parasites. Make sure the surface you're working with is very clean. For this, you can use fish like salmon, sea bass, mackerel, sea bream (dorade), or bonito just to name a few. You can even go to your local fishmonger and ask them what's in season and what they would recommend. If you are in Korea, I'm sure there are many options! Some of the best seafood in the world!

      @@ONTHEPASSWITHMAX Oh man I don't know how you knew I'm Korean but :) Unfortunately, I'm in the States and here they don't supply the most variety of fresh fish at the market. Even the farm-raised salmon from the Costco concerns me. But keep it up man. Love to see more of the cooking and plating

      @@user-zp2xm9jm2n I'm sorry to hear that! I don't have anything against costco, but if you're going to serve fish raw it should be very fresh. Depending on your location, maybe there is a fishmonger nearby, otherwise, I would stick to cooked fish recipes.
