There used to be a place in town that sold Chicharron con Carne. Had about a half inch of meat still attached to the skin. Cut up like a huge biscotti. All fried up and ready to eat. Talk about a fat bomb taking a bite of that! I miss it!
Your porchetta reminds me of a rolled pork loin we made with cooked sausage rolled inside and wrapped it with bacon. We called it Pork, Pork, Pork! Not too clever of a name but me and my friends are fairly simple dudes.
Sorry, but the arugula killed the sandwich for me. Caramelized onions though were an awesome touch!

I watched camphouse. He did a nice cook but he had so much tedious trimming around those bones and it just made it look like a lot of work for no more than what you got. Yours looked natural and rather simple to put together with outstanding results. You have my vote
