I know a lady who simply put the leg/thigh quarters into a crockpot on low for 8/9 hours too, with BBQ sauce. She said it was fantastic. She also said, next time she would use chicken broth instead of BBQ sauce and use the meat to make turkey and noodles.
I always use the legs and thighs, but I guess I'm not cooking them long enough. I've never had them fall off the bone like that. Thanks for the lesson.
Theres so many ways to cook the legs and wings off of wild birds. It should be illegal to waste that much meat off of a wild animal. I really respect Alaska in that regard
My Wife makes Enchiladas with the legs and thighs by boiling the Turkey legs then shredding the meat then sauteing them in a pan with spices make Enchiladas as usual they're the only Enchiladas l'll eat
Try the thighs cut up like you would cut up steak for fajitas. Cook like fajita meat. Bell peppers, onions sautéed in butter and olive oil. Turkey legs look like beef, they taste like beef when cooked like this. Put this in a soft tortilla with cheese and sour cream. It's amazing. You would swear you were eating steak fajitas! Do not throw turkey legs away!
The instapot with the Shun knives earned my sub. Love both of those tools in the kitchen. Just got a bird today. Can't wait to try this recipe.

Thanks for sharing. I’ve always just cut the breasts out, this year I decided to keep everything of my turkey, so my wife and I will be trying this.
I’m planning on following this recipe for my Turkey legs, if I want to use a crockpot would it be 8 hours on low?
I sous vide them for 24 hours then pan sear.. Never waste those legs!
