Today's video is about Making 1,600 macaron shells in bulk by myself.
And it took time for 3 hours and 1 quater!!
(count out ingredients preparation time)
How can I do it..??? 😉😉😉
Last time, I made 500 macaron shells (diameter 5cm) in less than 3 hours.
But this time, macaron's diameter is 3.5cm, small size❤ These are very cute!!
And I reduce baking time so It's not crispy!
Very chewy as usual.
Someone asks me why you make so many.
Because I'm selling macarons in my store! Did you get the answer? 😄😄
Today, I didn't fill it and it will be made
into macaron shell flakes..🧡
I am going to give you some tips!
[Great time-saver tips]
I don't rest the macarons at room temp.
I am drying macaron shells in the oven immedietly, after piping.
oven drying of high temperature (2min), baking (12min), oven shower(1min) - It takes less than 15 min.
(Only use convection oven)
I am doing macaronage with stand mixer(kitchen aid 5 quater) at all the time.
But sometimes I have to use a spatula to clean up the walls of the bowl.
I have 3 kichen aid stand mixers, 2 unox ovens and I use them at the same time.

1. What is oven shower..??
- The oven-shower is to wait 1-3 minutes without removing the tray in the oven after baking. (with open the oven door)
2. How to dry in the oven..?? (high temp.)
- 1st preheating 120℃ - turn off - put the tray in to the oven (at this time the temperature drops to 90-100℃) - 2nd preheating 120℃ - start to dry, until the temperature reaches 120℃ again (with open the oven door) - close the door and bake (don't take it out) - oven shower
Look at the subtitles in the my other videos, there is detailed temperature.
3. What is the baking mat's name..??
- This called a teflon sheet.
4. How long do you whisk meringue or do macaronage with mixer..??
- It's not important how long I did.
Because we have different machines and environment..!
You should check the cocsistency of meringue or mixture frequently.
5. What kind of colors do you use?
- Chefmaster liquid colors

- My ovens are UNOX 135 and convection type.

- I made all templetes myself and I am not

10. Do you left or bake immediately..?
- As I already explained, I do not leave it because I am drying in the oven at high temperatures for 2-3min.
It is a very useful and convenient tip to reduce the time required.
Also you can get shiny and smooth shells.

@@SugarBean You must teach us how! :) I'm always worried about getting a teeny weeny bit of egg yolk on my egg whites when I do meringues. I always have to use at least 3 bowls.
She inspired me to arrange my production in a similar way. I separated eggs recently and the VERY last egg’s yolk broke but it didn’t cause a problem thank goodness. I was able to make almost 7 batches with no issues 🥳

I don’t know why, but when I would make pancakes, the same thing would happen. Now though, if I make a half batch of crepes, the only thing that gets dirty is a small ladle, a pan, a bowl and a whisk. I couldn’t tell you why.

Honestly if find this relaxing if I was the one baking. Cause I’m by myself, everything so organized and neat, everything measured correctly, no one bothering me, no one there to mess me up or distract me. This is why I like doing things alone

Same here. When we used to give big dinner parties, I’d work all week, then cook/bake all night long after everyone had gone to bed Friday night. It was quiet, and there were no interruptions. It was very satisfying!
And then your dad comes in, disturbs you, makes you anxious and then starts ranting about youre making a mess in his kitchen (which you aren't but you can't say anything out of fear he might do something) and then tells you to clean up before he comes downstairs again and you better not mess up.... This is why i never bake

She probably baked them really well. If the macaron sticks to the paper it means it hasn't been baked long enough. The ovens she has must be amazing though!

Didn't you actually make 1710 macaron shells, because if one sheet holds 70 and you use 2 of those and an additional 5 rows, that's already 190 per colour, and 190 times 9 for the 9 colours is 1710. Sorry for the obnoxious comment, but it was already impressive that you made 1600, but then to realize you downplayed it. kudos to you anyway!

I cannot see why anyone would not like this. She is neat, organized, clean, talented, precise and patient. These are from scratch not out of a bucket like most Bakeshop and restaurants in Canada. I do say most, i am sure we have a few that work from scratch. I know how long it takes me when i am baking. I rather like working on my own with no distractions.

Well yes and no. She made 1600 shells, which means 800 macarons. So $2/cookie would be $1600 before expenses for ingredients and labor. But still, not bad at all!

@Dxlilah some may not know but almond flour is expensive 🤣 and having a oven heats evenly is key to macaroons. Which my oven sucks at 🤣 lucky make cakes.
Katherine Canon my oven doesn’t cook at the bottom so most of our cakes/pizza’s and stuff are weird but when I made macarons, they cooked properly because they’re so small so I don’t think it will matter that much. And trust me, the first batch I made looked terrible but they tasted AMAZING! So it won’t batter if they don’t look good or if they are a bit burnt.
Its so soothing and calming, yet I can only imagine what it feels like to micro manage every single thing going on in that kitchen
