    I just did these on my weber kettle. Literally done in 4 hours, but that's because the heat went a bit higher than anticipated. Probed nicely, temps were on point, good pullback, bark, the whole 9 yards. You're absolutely right these are very forgiving. Been bbq'ing for a long time, never actually done the big plate ribs like this before and your vid here actually got me to get a rack and get er done!

      It's so versatile and easy to use. When I don't have time for the offset I put the sns in the kettle and can turn out some really good food with minimal effort.

    Same same for me down under in Australia. Bought beef ribs from Costco. Cooked them on my pellet smoke for 5 hours. Just like yours they were the best. So easy. So tasty. My boys love them! Thanks man! 👍👍🙏🇦🇺

    I've only done one rack of beef ribs and I had about this same result. I did them in my Primo ceramic grill and they were completely done in 4 hours, and my temps never went above 250. They turned out perfect and now I'm planning to make some more after seeing this!

    Brad, you inspired me to cook a brisket on my kettle. I didn't have all the nice equipment, but I made due with a weber charcoal basket and I lined the charcoal grate with foil, so that only the basket was uninhibited. I gotta say, it worked perfectly! I didn't use a water pan, but I had a spray bottle handy with water and vinegar. If I can get a hold of some dino ribs, I'll definitely give it a shot next.

    That was beautiful, I've done them on the kettle grill and they got done in 4 hours. Great bark super tender. They cook pretty quick in the can cooker as well. Putting beef fat into the fire is genius. I've been doing that ever since I seen you do that. You are truly a inspiration. To us back yard guys. Thank you brother.

      Yes you can definitely taste the flavor. I use some trim or just some hard fat at the beginning of the cook. When the meat takes on the most smoke and flavor.

    Last Beef rib cook I did on my 26' kettle took me a little around 4 and a half to 5 hours as well. Interestingly enough I also had the same pull-back on one bone removing alot of meat.

    All you need is a Weber Kettle and some meat. This is why Weber has been around forever and os often imitated. I have a vertical smoker and a drum. 9 times out of 10, I use the Weber. I cook beef ribs at least once a month as brisket is not available here in the Middle East. Never longer than 5 hours. Lamb shoulder is great on the Weber as well. Also, whole beef shank or as Oso Bucco.

    I've done PR dinos on the SnS kettle at 275 and it took around 5.5 hours (this was last summer). I did them on the SmokeFire at 275 (it was also 10 degrees outside) and it took 7 hours. Both were great results but the time to complete them on the kettle was impressive.

    Totally doing a side by side comparison Weber Kettle v. Kamado this weekend. Took 2 Dino ribs out of the freezer yesterday. Great timing and love the Weber Kettle series!

    Love the webber kettles, I got a new 14 inch smokey mountain smoker last month,it's amazing how it cooks! If someone is going to buy their first grill or something to cook just about anything on it's the kettles. Please try to do chicken with a vortex. I got a 1/4 inch thick stainless cone for one of mine it's a chicken machine now!

    The short rib cuts work great on a Smokey Joe. 3 pieces (one whole rib cut into three sections) fits perfectly. So good. I season with salt, pepper and Saigon cinnamon. That's it.

    I love my Weber, smoked some pork ribs last week and they didn't take as long as using a stick burning and came out tender and delicious. Saved about an hour over using a stick burner.

    The last time I did beef ribs on my Weber Kettle, they took about six hours, and I was able to hold a temp around 255-275 the entire time. I also got them done on one load of charcoal in my Slow N' Sear. It's a super easy cook that I would do more often if those dino ribs weren't so darn expensive.
    For the next cook, please do some sweetbreads to make some tacos de mojellas. They're super cheap but rich and decadent when done properly.

    All these delicous recipes and marvelous cooking channels on CZcams like this one!!!! Can't fix it. Not a piece of meat be found in my pantry and nothing within about a 10 mile radius of my home in any of the supermarkets I visited today - just empty shelves and people walking around hungry, tired and listless. What I fear is that everyone's search for protein might lead to cannabalism.

    I just did baby back ribs on a kettle grill and spare ribs on a offset smoker for a party Sat. I actually preferred the weber grill over the offset. So now I am going to buy a grill to my bbq arsenal after how great the results were.

    Love it!
    You should try cooking a brisket ‘hot and fast’.
    Game changer
    Takes the same time as your Dino beef ribs..
    Five hours at 350F until internal temp, then rested for a couple of hours for the most delicious brisket.
    This method is my go too.
    No more 10-12 hour cooks in the kettle.

    If you like these ribs try beef back ribs smoke for 2 hrs at 275 then wrap for 1 hr then sauce at the very end something sweet. Not as much meat but tons of flavor.

    I had pretty much this exact same experience. The first time I ever tried ribs was on a Weber with a SnS, and the ribs were literally done in half the time I was expecting. For the for time ever in the history of me smoking meat, I actually had to move the family dinner time earlier than scheduled.

    Great series. Did dino ribs on my pellet grill a month ago at 230, then bumped it up, still took 8hrs, Dont know whats worse, done a hour later than expected, or 5hrs early. Its the joy of smoking, you never know for sure. Great looking ribs, love the comment, "whats one part?" hmmmm

    Another great video as expected! I watch them all. I do have a question about resting beef ribs. Is there any reason to suspect that the long, heated, overnight rest that you have experimented with brisket in recent videos would have a different result for beef short ribs?

    I did my first plate ribs on a Weber kettle. It was awesome shit. I used BnB lump and it took 4.5hrs. Rested 2 hours in butcher paper in a cooler because they got done way earlier than I wanted lol. They turned out awesome. I pulled the bones clean out because I removed the membrane and sliced them like brisket. Made for awesome sandwiches

    Bradley.. yes, 8 hours in my WSM as it’s even less “direct” due to the distance. I cheat with a Hunsaker Vortex over the coal/wood bed. I’m totally saving for a mini Chud box.

    Yep, same with a pork butt. Use the kettle in a time crunch. I turn mine to get even cooking and even pull back. Love my wsm but the kettle is amazing. $170 bucks and you're cooking.

    Hey brother.
    I do these in the same way. I've done a hold at 170 overnight and that dried them out and ended up with half of the yeild. Just like
    you I started doing this method. No long rest needed. 30 to 45 minutes. If they are done they are done.

    This is my favorite meat to smoke and have cooked a few on my Kettle. They are always fantastic. However, I cooked one on my PBC the other day, lump charcoal only with no wood chunks. I liked it better than any other beef rib I ever cooked. Probably similar to Chud box cook. Sometimes simpler is just better.

      Could that have been due to fat dripping over the charcoals in your PBC? Brad has added fat over the coals to get some fat smoke flavor.

      @@CoolJay77 No doubt. I've heard a lot of folks are now adding chunks of fat to the coals in stick burners too.

    I cooked them on a Green Egg and had the same experience. Expected to cook all day, but they were finished in a few hours.

    I dunno why but lately i'm having the same results with beef ribs with my commercial smoker. Five or six slabs done in five ours. I remember the first times I was kooking them, they were taking me around 8 hours. Now, although nothing has changed in the tecnique, rub or anithing else, the cooking time has dropped a lot!

    Dang those look good! So lemme ask you, Bradley, since these finished way faster than you were expecting, do you think they would hold okay in a cooler for a couple hours?

    Usually when I buy these at the store they come sold cut up and I ask for them whole as an 4bone and takes about 5hr . I use a red hot as a binder and wrap them at 4hrs and put them in a cooler for the last hour

    Just made this tonight and got it finished in about 3 1/2 hours with the snake method. Still had some coal left over. The ribs got nice and smoky, even got a smoke ring.

    Try grilled brisket tacos. Slice brisket thin and season with lawry's. (Watch for flare up's) chop it up and place on a corn tortilla with some green gallos sauce. (Cilantro, onion, and lime optional)
